Ingredients

  • 1-1/2 pounds Alaska Sockeye Salmon, either fresh or frozen and thawed
  • Heavy-duty aluminum foil
  • Cooking spray
  • 1-1/2 teaspoons kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup white wine
  • 2 Tablespoons melted butter or extra virgin olive oil
  • 2 Tablespoons garlic, finely minced
  • 2 Tablespoons fresh herbs of your choice, chopped
How to Cook Wild Sockeye Salmon

1. If using frozen salmon, allow it to thaw before you begin. When cooking sockeye salmon, you should remove it from the refrigerator approximately 15 minutes before you begin. Heat the grill to 375 degrees Fahrenheit.

2. Use two pieces of heavy-duty aluminum foil, cut approximately six inches longer than the salmon. With the shiny side of the foil pointed down, place the foil on a heavy baking sheet. Spray the baking sheet with a coating of cooking spray.

3. Place the salmon in the middle of the aluminum foil with the skin side down. Create a shallow pan around the fish with one- to two-inch sides. The best way to do this is to simply fold the aluminum foil up on each side, making sure to leave at least one inch around the salmon on each side. This space gives air room to circulate and roast the fish during grilling. Season the salmon with salt and pepper to suit your taste.

4. Stir together the white wine, butter, garlic and your choice of herbs in a small bowl. Some great herbs to use with salmon include oregano, basil and paprika. Next, pour this mixture over the salmon.

5. Move the foil pan to the center of your preheated grill. When cooking wild sockeye salmon, make sure not to cover the salmon during cooking, because the steam from the fish will need to escape to avoid overcooking. Close the grill cover and cook for approximately 10 minutes. Start checking the fish for doneness after 10 minutes to avoid overcooking. A slightly translucent center is an indication of doneness. When the fish is cooked, remove it from the heat. The fish will continue to cook after it comes off the grill.

6. Let the fish rest for several minutes before serving, allowing it to reabsorb the juices before it is cut.
