  • 4 sockeye salmon half-fillets
  • 2 Tablespoons soy sauce
  • 1/4 cup brown sugar, packed
  • 2 teaspoons minced ginger
  • 6 Tablespoons peanut butter
  • 2 Tablespoons hot water
  • salt and pepper
  • cooking spray
  • chopped peanuts and cilantro, optional


1. In a bowl, combine the hot water, soy sauce, and brown sugar. Then, add the ginger and peanut butter. Stir well. This sauce for sockeye salmon will store well in the refrigerator.

2. Tear some aluminum foil. Heavy-duty is best. How long the foil should be is about 6 inches longer than the salmon. Spray the foil with cooking spray.

3. Place the salmon skin-side down on the foil. Brush each piece of salmon with a bit of sauce and season with salt and pepper. Fold the edges of the foil up to form a kind of pan.

4. Put the foil in the middle of a preheated grill. Cook for 10-15 minutes.

5. Cover with the rest of the sauce.

6. Optionally, top the salmon with peanut sauce with peanuts and cilantro. It looks and tastes great.
