Grilled Rockfish with Garlic and Basil

How to cook rockfish

Mush like other white fish, cook rockfish is simple to prepare and its mild flavor makes it the perfect fish to absorb any flavors you add. This particular recipe calls for a tangy lemon and garlic marinade for at least thirty minutes which will infuse the rockfish flavor while working to keep the meat tender and mouthwatering. 

A quick trip to the grill, about 5 – 6 minutes per side, will have this tasty morsel on your plate in no time. While it cooks, you can throw together a quick salad or prepare some herbed butter for your bread. 


Ingredients

  • 3tb Vegetable Oil1tb Lemon juice
  • 4tb butter 4 clove garlic
  • 2tb Basil, fresh; chopped
  • 1 dash Cayenne pepper
  • 2lb ROCKFISH FILLETS

Preparation

 Marinate the fish in the oil and lemon juice for at least 30 minutes before grilling. Grill for 10 to 15 min, turning only once. Time depends on the thickness of your fish. Heat the butter and stew the garlic for 3 min stirring constantly to make sure it doesn't brown. Add the basil, cayenne pepper and remove from the heat. Either pour the garlic butter over the fish or serve it in a gravy boat on the side.
