Grilled Rockfish with Garlic and Basil

Global Seafoods' best grilled rockfish recipe

Rockfish taste isn't a well-known fish, but it should be. It is versatile and flavorful without being overly ″fishy.″ It may not be as flashy as salmon or other Pacific and Atlantic wild seafoods, but what it lacks in appearance it more than makes up for in flavor and texture. Wild Pacific Rockfish comes in many varieties, such as yelloweye, dusky, and Black Rockfish, and they all share the same great quality meat.  It's easy to learn how to cook and lends itself well to many cooking styles and flavor profiles including bbq, Asian-inspired, and spicy Mexican flavors. Check out our grilled rockfish fillet recipe and see for yourself what Alaskan Rockfish has to offer your taste buds!

How to cook rockfish

Mush like other white fish, cook rockfish is simple to prepare and its mild flavor makes it the perfect fish to absorb any flavors you add. This particular recipe calls for a tangy lemon and garlic marinade for at least thirty minutes which will infuse the rockfish flavor while working to keep the meat tender and mouthwatering.

A quick trip to the grill, about 5 – 6 minutes per side, will have this tasty morsel on your plate in no time. While it cooks, you can throw together a quick salad or prepare some herbed butter for your bread.

  • 3tb Vegetable Oil1tb Lemon juice
  • 4tb butter 4 clove garlic
  • 2tb Basil, fresh; chopped
  • 1 dash Cayenne pepper

Marinate the fish in the oil and lemon juice for at least 30 minutes before grilling. Grill for 10 to 15 min, turning only once. Time depends on the thickness of your fish. Heat the butter and stew the garlic for 3 min stirring constantly to make sure it doesn't brown. Add the basil, cayenne pepper and remove from the heat. Either pour the garlic butter over the fish or serve it in a gravy boat on the side.
