Wild salmon has a superior taste, texture, and nutritional value.
You'll want to start with a good, thick salmon steak. This hearty cut can stand up to the high heat and a fair amount of rough handling. You can use salmon fillets, but they are a little more delicate, and may be better used with plank recipes. Wild sockeye salmon is the best salmon for grilling, but any type of Alaskan salmon can be cut into suitable steaks, so don't worry too much about the details. You can add a kick of flavor to your meal by trying a salmon brine, but you can also just start grilling right away.
What about planks?
A lot of people enjoy grilling their salmon using the plank method. It's definitely tasty, resulting in a moist and decadent piece of fish. Grilling plank salmon takes a little more prep time than just throwing the salmon on the grill, but it's worth the extra effort. For perfect cedar plank salmon, you will need to soak a suitable cedar plank in salt water, wine, or sake for about 2 hours before you can grill. After that, the instructions are basically the same.

For plank salmon: Soaking fluid such as wine, salt water, sake, or cider, and cedar planks
Heat your grill to about 350°F. Brush salmon with olive oil on both sides. Sprinkle with salt, pepper, dill, and garlic, then place fish skin side-down on grill grates. If using planks, lay salmon on planks, then place on grill grates.
Cook for 5 – 6 minutes, then flip. Cook another 3 – 10 minutes, depending on your taste. If using planks, there's no need to flip—the salmon will cook by steaming.
