In medium sauce pan over medium heat, add lemon juice, shallot, and salt. Reduce the mixture to about half. Once the lemon juice is reduced to half, add 1 small piece of cold butter to the pan. Lift pan, swirl in a circular motion, allowing butter to fully melt and mix with the sauce before adding the next piece. Repeat until all pieces are incorporated. It should appear slightly thicker and creamy at this stage. Add chopped parsley to taste and let warm for 30 seconds over low heat.
Ingredients (fish-frying style)
Preheat a medium skillet on medium heat with enough butter to cover the bottom. Lightly salt and pepper each fillet of your chosen fish. Place fish into heated skillet. Cook to an internal temperature of at least 145 ⁰F.
Plate your fish, then spoon a generous portion of your sauce over the fish. Garnish with more parsley, if you wish, and chopped almonds. If serving with pasta, the sauce can be used for the pasta as well.
