What do Shigoku Oysters Taste Like?
Shigoku oysters are smooth and briny with a sweeter, cucumber like finish. These raw oysters are refreshing and delicious. They come in a smooth and deep 2-2.75 inch shell.
In Japanese, the word "shigoku" means "ultimate," and these indeed are the ultimate oysters for sale online. Pacific oysters have a softer, creamier texture than their Atlantic counterparts. While sometimes much brinier, they have a sweet and smooth after taste.

How to shuck oysters:
When you go to shuck oysters, it's crucial to have a few things on hand to prevent injury. Oysters have strong muscles that hold their shells closed, and since these oysters are live, those muscles will be working hard to keep you from getting inside.
We recommend an oyster shucking knife and an oyster glove to keep from poking yourself with the tip of the oyster knife. If you don't have an oyster glove, you can hold the oyster firmly in a kitchen towel. You want to hold the oyster to expose the hinge or where the two shells taper together.
You want to work the tip of your knife into the hinge gently. This isn't about forcing your knife deep into the shell. You want just enough leverage to be able to twist the knife and pry apart the two halves. You want to twist and pry the shell until you hear a pop, and the two shells give way. You may have to re-position your knife a few times as you get the hang of shucking oysters.
