Alaskan Pollock is likely one of the most popular fish in the US, yet most people do not even realize that they eat it. Most of the time when it is sold, it is simply sold as a "white fish", and can be found in many restaurants in the US.  The Alaskan Pollock has a very light and low oil flavor and has firm white meat. Alaskan Pollock Fillets are often used in fast food restaurants for their sandwiches. This does not mean that Pollock is a low quality fish. Alaskan Pollock Fillets are a very high quality fish filled with plenty of nutrients. Alaskan Pollock is often used to make surimi. Surimi is also know as "imitation crab". The majority of the catch is eaten fresh.  People often confuse Alaskan Pollock for Atlantic Pollock, which are two completely different fish.  Alaskan Pollock will have much whiter meat, and not be as oily as its Atlantic counterpart.  The average size of an Alaska Pollock is around 2lbs, but they have been found to grow up to 15lbs. Alaskan Pollock comes out very well fried or baked.
