Coho (Silver) Salmon Fillet - Oncorhynchus kisutch
Coho Salmon, also known as Silver Salmon is one of the most popular species of Salmon in the American Market. It is called Silver Salmon due to its silver skin. The scientific name comes from its Russian name, Kisutch. Coho Salmon can be found throughout the Northern Hemisphere in the Pacific Ocean. It is sought after and caught by US, Japanese, Russian and Canadian fisheries. Even though in 2010 21,000 tonnes of Coho were caught, it only makes up a small part of the salmon market. Coho Salmon is especially popular in areas of the Pacific Northwest, Western Canada and Alaska. Coho Salmon is popular due to its very flavorful meat and its abundance of vitamins and Omega-3 Fatty Acid, making it a very healthy choice. Only in certain times do King Salmon and Sockeye Salmon contain more fat content. This makes Coho Salmon one of the most flavorful of the salmon variety. Due to this, Coho Salmon is often regarded to as a much better deal when it comes to price than Sockeye. These fillets will be full size.
