Beluga Caviar: 

Our Beluga caviar is farm-raised in Italy by some of the most experienced caviar farmers in the world. The Beluga sturgeon is one of the largest varieties of sturgeon. Beluga caviar is one of the most sought after caviars in the world. 

The female Beluga sturgeon can take up to 25 years to reach maturity and produce eggs. The age of maturity is one of the reasons why caviar, and especially Beluga caviar is so rare and expensive. It also takes decades for the Beluga sturgeon populations to replenish themselves in the wild. 

Because of such high demand, a black market for beluga caviar has created problems for the fish. Countries have adopted strict laws to help this fish from becoming extinct. Beluga caviar farmers have developed a hybrid fish that produces roe that most closely resembles that of wild beluga caviar.

The life cycle of the sturgeon fish is mostly responsible for the higher caviar costs. Depending on the species, it can take anywhere from 5-25 years for a female sturgeon to reach maturity or egg-producing age. 

Female sturgeon have been overfished to such an extent that the wild sturgeon populations are severely endangered. Sturgeon farms are developing best practices for sturgeon farming, but we are still left with a long life cycle that contributes to the higher prices of caviar. 

Sturgeon farmers globally are working to develop better harvesting practices that would allow the female sturgeon to produce eggs or caviar more than once in her lifetime. Once we accomplish that, we may see a dramatic decrease in caviar costs.
