Alaska Pollock vs Russian Pollock: How Processing Changes the Product

Alaska pollock and Russian pollock are often discussed as if they were two completely different fish. In many cases, they are the same species, Gadus chalcogrammus, harvested on opposite sides of the North Pacific. The more useful question for a buyer is not simply which flag was associated with the catch. It is what happened to the fish between the trawl and the finished fillet.

The difference between Alaska and Russian pollock cannot be reduced to a flag on the carton.

I worked for about six years directly with Russian pollock operations, including management, repair and commercial work involving factory supertrawlers. At one point the operations I worked with included 12 vessels producing pollock fillets, mince, surimi, roe, fish meal and fish oil. I later worked extensively with Alaska seafood and shore-based processing in Kodiak. That experience showed me that two fillets from the same species can arrive at the market with very different processing histories.

Alaska Pollock and Russian Pollock: Often the Same Species

Alaska pollock is Gadus chalcogrammus, a cod-family fish distributed across the North Pacific. Commercial fisheries operate in U.S. and Russian waters. Country of harvest matters for traceability, fishery management, trade and labeling, but nationality alone does not tell you whether a finished fillet was processed at sea, processed ashore, frozen once or frozen twice.

Four Processing Histories a Buyer Should Understand

None of these chains can be judged from a country name alone. Russian vessels can produce single-frozen final products. Alaska shore plants can produce excellent once-frozen fillets. A fish caught in Alaska can also enter a secondary-processing chain and become a twice-frozen fillet.

Single-Frozen vs Twice-Frozen Pollock

For fillet quality, freezing history is one of the most useful questions a buyer can ask.

A simplified single-frozen chain is:

Catch → process into final fillet → freeze → cold storage.

A common twice-frozen chain is:

Catch → H&G processing → freeze → transport → thaw → secondary filleting → freeze again.

Historical NOAA market analysis documents Alaska and Russian H&G pollock being sent to China for secondary processing into fillets and other products, with much of that supply entering international markets as twice-frozen product. That history is important, but it should not be turned into the false statement that Russian pollock is automatically twice frozen. It is not.

Two pollock fillets from the same species can have very different processing histories before they reach the consumer.

Why Twice-Freezing Can Matter

Freezing is an essential preservation technology, not a defect. The issue is the additional thawing, handling and refreezing cycle. Each processing step creates another point at which temperature control, moisture, texture, yield and product specification must be managed.

That is why a well-made frozen fillet can be excellent while the word “frozen” by itself tells you very little. The better question is how the product was processed and how many freeze-thaw cycles occurred before it became the final fillet.

Factory Trawler vs Shore Processing

Factory vessels have an important logistical advantage: catch, processing and freezing can occur within one integrated production system. But “factory trawler” is not automatically a quality grade. Actual quality still depends on raw material condition, production discipline, machine adjustment, crew performance, quality control and freezer capacity.

Shore processing has a different chain. Catcher vessels deliver fish to a plant, where the fish is unloaded, graded and processed. During the period when I operated processing in Kodiak, the practical challenge was not simply running filleting machines. The entire system—delivery timing, unloading, labor, line balance, inspection and freezing—had to stay synchronized.

A good shore plant can make excellent pollock. A poorly controlled factory vessel can make inconsistent pollock. Processing discipline matters more than a marketing label.

Why H&G Pollock Became an International Commodity

Headed-and-gutted pollock can be frozen near the point of harvest and moved economically to a lower-cost secondary-processing location. Historically, China became a major center for this work. NOAA market studies describe both Alaska and Russian H&G pollock entering Chinese secondary processing before finished fillets were re-exported to markets including Europe and the United States.

This model separated harvesting from final fillet production. It also created an important distinction between country of catch and country of final processing.

Country of Catch Is Not the Whole Supply Chain

A carton may tell you where the fish was harvested, but a serious buyer should also understand where the final product was made. Depending on the supply chain, harvesting, primary processing, secondary processing and final freezing can occur in different countries.

This is why “Alaska pollock” should not automatically be interpreted as “processed in Alaska,” and “Russian pollock” should not automatically be interpreted as “twice frozen in China.” Ask for the actual specification.

White Fillets Do Not Automatically Mean Fresher Fillets

Pollock buyers often associate bright white color with quality. Color can matter commercially, but it is not a reliable standalone test of freshness or processing history.

In the twice-frozen pollock business I encountered, after frozen H&G pollock was thawed for secondary processing, untreated fillets could have a more yellowish appearance than the very white blocks some buyers expected. Secondary processors could use soaking or other treatments as part of meeting a finished-product specification.

That does not mean every twice-frozen fillet is treated, and it does not mean a white fillet has been chemically whitened. Species condition, blood removal, trimming, deep skinning, storage and processing all influence appearance.

Color is a specification clue, not proof of processing history.

STPP Is Not Bleach

Sodium tripolyphosphate (STPP) and related phosphates are used in some seafood processing systems for functions such as moisture retention and yield management. They should not be confused with whitening or bleaching agents.

Whether a particular pollock product contains phosphates should be determined from its specification and ingredient declaration—not guessed from its appearance. Treatment practices vary by processor, product and market.

For the same reason, a buyer should not assume that all twice-frozen pollock contains STPP or that all single-frozen pollock is untreated.

Is Russian Pollock Lower Quality Than Alaska Pollock?

Not inherently. I worked directly with Russian factory trawlers capable of producing strong commercial products, including fillets, mince, surimi and high-value roe. Russian at-sea production can be highly integrated, just as U.S. catcher-processors can be.

The meaningful comparison is more specific:

  • How fresh was the raw material when processing started?
  • Was the final fillet produced at sea or ashore?
  • Was it frozen once or twice?
  • Was the raw material previously frozen H&G fish?
  • What additives or processing aids, if any, were used?
  • What fillet specification was produced?
  • How well was the cold chain maintained?

Those questions tell a buyer more than the flag alone.

Is Alaska Pollock Automatically Better?

No. Alaska origin provides useful information about fishery jurisdiction and traceability, but it does not automatically describe the final processing method. Alaska pollock can be processed aboard a catcher-processor, delivered fresh to an Alaska shore plant, or historically exported as frozen H&G raw material for secondary processing elsewhere.

Likewise, “single frozen” does not automatically mean “frozen at sea.” A shore plant can produce a single-frozen final fillet from fresh fish delivered by a catcher vessel.

FAS, Shore-Processed and Single-Frozen Are Different Terms

  • FAS / frozen at sea describes where freezing occurred.
  • Shore processed describes a processing location.
  • Single frozen describes the number of freezing cycles in the relevant product chain.
  • Twice frozen generally describes product made after previously frozen raw material is thawed, processed and frozen again.

A single-frozen product is not automatically FAS. This distinction is especially important when comparing commercial pollock specifications.

What I Learned Working With Both Russian and Alaska Pollock

My experience on the Russian side taught me how much factory design and production discipline influence the finished product. A supertrawler is not simply a fishing boat with a freezer. It is a floating production plant in which fish flow, grading, machine feeding, roe recovery, filleting, trimming, surimi production, freezing, packaging, refrigeration and engineering all have to work together.

My later Alaska and Kodiak experience reinforced the same lesson from the shore side. A different processing model creates different bottlenecks, but the fundamental rule remains the same: the finished specification is created by the whole production system.

Good pollock is not created by a flag. It is created by good raw material, controlled processing, the right specification, proper freezing and an uninterrupted cold chain.

Buyer Checklist: How to Compare Pollock Fillets

  1. Confirm the species. Alaska pollock should be Gadus chalcogrammus.
  2. Ask where it was harvested.
  3. Ask where the final fillet was processed.
  4. Ask whether it is single frozen or twice frozen.
  5. Do not assume single frozen means frozen at sea.
  6. Ask whether the fillet was made from fresh fish or previously frozen H&G raw material.
  7. Read the ingredient declaration. Do not infer additives from color alone.
  8. Compare the actual specification: size, trim, skinning, bones, glaze, additives and pack format.
  9. Consider intended use. A foodservice block, retail fillet and industrial raw material may require different specifications.
  10. Evaluate the cold chain. Even a strong production specification can be damaged by poor temperature control later.

For buyers comparing products, our recommendation is simple: ask how many times the fish was frozen and how the final fillet was produced—not simply how white the fillet looks or which country name appears most prominently on the carton.
