- Add tuna cubes; stir gently 2–3 minutes to 130–135°F internal. Tuna should be just cooked through with a slight pink center — do not overcook to fully opaque or it will be dry.

Note on oil: Sesame oil has a smoke point of ~350°F — too low for stir-frying. Use avocado or another neutral high-heat oil to cook; add sesame oil off-heat as a flavor finisher only. Storage: Refrigerate up to 2 days; reheat quickly in a hot pan to avoid overcooking the tuna again.
Recipe 5: Albacore tuna patties
Ingredients: 2 cans (6 oz each) albacore tuna, drained and pressed dry; 1/4 cup panko breadcrumbs; 1 egg, beaten; 1 tbsp mayonnaise; 1 tbsp chopped flat-leaf parsley; 1 tsp garlic powder; salt and pepper; 1 tbsp avocado oil for pan.
- Drain tuna thoroughly — press with paper towels to remove excess moisture. Wet tuna produces patties that fall apart and steam instead of sear.
- Combine tuna, panko, egg, mayo, parsley, garlic powder, salt, and pepper. Mix until just combined — overmixing makes the texture pasty.
