Whole-Fish Format
Whole-fish order weight is different from boneless loin yield. Confirm the current fish size and supplied preparation, including whether the head and viscera are removed, before planning your portions.
Prepare and Cook
For a steak or loin recipe, first complete any necessary cleaning and cut the fish into suitable portions. Cooking time depends on thickness, starting temperature and equipment; a short steak-searing time is not a cooking instruction for a whole fish.
Grill, pan-sear or bake the prepared portions, checking the thickest edible part with a food thermometer. The FDA seafood preparation guide recommends 145°F for most seafood. Flake cooked albacore into salads or serve with vegetables and rice.
