Alaskan Halibut Recipes: What is Halibut? 

Alaskan halibut fish is one of the largest species of fish found in the world's oceans. The largest ever recorded halibut catch was over 500 lbs! 

Halibut is a large flatfish that is sustainably caught from the Pacific Ocean. Halibut fisheries expertly managed the pacific halibut industry to ensure minimal environmental impact and prevent overfishing. 

The wonderful texture of halibut is part of why it's so popular for so many vastly diverse recipes. From citrus and garlic to curry's spice, halibut takes on the taste of just about any flavor combination imaginable.

Wild Alaskan halibut is a meaty fish with a mild flavor and buttery texture. Halibut fillets are thick and firm without being dry or tough.

It isn't easy to come up with a perfect halibut taste description. But if we were to describe halibut's flavor, it would include adjectives like mild, sweet, and buttery. Halibut tastes similar to other mild white fish, but halibut steaks  offer a meatier texture that many people prefer over more delicate fish. The thicker texture and firmness of halibut steaks make them much easier to work with in the kitchen. 

It's difficult to overcook halibut steaks, so don't be afraid to experiment with pan searing or grilling halibut. 

 

When planning your halibut recipes, there is no best way to cook halibut. Halibut stands up well to just about any cooking method, from grilling to pan-searing. For this recipe, we prefer a gentle braise to allow all of the flavors of curry to permeate the fish and mingle with the Alaskan halibut taste

Our favorite thing about the halibut taste is how well it goes with just about any flavor you throw at it. From blackened seasonings to citrus and herbs to Caribbean hot peppers, it probably goes well with Pacific halibut

 

Halibut Nutrition: 

Part of halibut's increasing popularity is due to its nutritional profile. Halibut is a healthy food choice.  Wild Halibut recipes are naturally high in protein and low in fat. Combine your wild halibut recipe with fresh veggies and whole grains for a balanced meal that your entire family will enjoy. 

One 3 oz serving of wild Alaskan halibut has 22 grams of protein and just 2.5 grams of fat. Halibut is high in potassium, magnesium, and B vitamins, all essential to good overall health. While halibut is a larger ocean fish, the mercury rating of Pacific wild-caught halibut is relatively low. You can comfortably eat halibut once per week without increasing your risk of mercury exposure.

Alaskan Recipes Meet Southeast Asian Recipes with Red Curried Halibut with Fresh Vegetables: 

Ingredients: 

  • 4-6 Wild Alaskan Halibut fillets thawed or partially thawed. 
  • 2 tablespoons of high-quality olive oil or high heat cooking oil of your choice. 
  • 3 large celery stalks. If you don't like celery, bok choy is an excellent alternative. 
  • Celery leaves chopped-about three tablespoons. If you're not using celery in this recipe, it's ok to omit the celery leaves. 
  • 1 cup of snow peas (fresh). Alternatively, you can use fresh or frozen peas. 
  • 1 red bell pepper sliced thin
  • 1 yellow bell pepper sliced thin
  • 6-8 cloves of garlic sliced thin
  • 2-4 tablespoons of your favorite red curry paste. Red Curry paste can be found in most grocery stores or ordered online. It keeps in your pantry for months until you are ready to use it. 
  • 1 cup of veggie stock. You can use fish stock for this recipe, but we prefer vegetable stock to let the halibut speak for itself. 
  • 1 1/2 cans of light coconut milk. About 21 oz total. 
  • 1/2 cup of roughly chopped cilantro leaves. You can use mint or cilantro, but we love the combination of red curry paste and cilantro. 
  • Juice from one fresh lime. 
  • Salt and pepper to taste. 

How to cook halibut (curry style):  

  1. Take your halibut fillets and pat them dry. Place them on a cutting board and season both sides with salt and pepper. 
  2. Prepare a large skillet with olive oil and heat over a medium-high flame. 
  3. Place your veggies in your prepared skillet and sauté gently for 2-3 minutes. We prefer our veggies slightly crunchy, so we don't overcook them. 
  4. Add in your sliced garlic and continue sautéing your veggies and garlic for another minute. 
  5. Remove your veggies from the pan and set them aside. 
  6. Reduce the heat in your skillet to medium and add a few extra drizzles of EVOO. 
  7. Place your curry paste, coconut milk, and vegetable broth in the skillet. Wisk them all together and simmer them for about 5 minutes. 
  8. Place your halibut fillets in the simmering broth and braise your fillets for 10-12 minutes. We recommend flipping your fillets about halfway through or basting them with the curry broth during cooking to immerse the fish in the curry flavor. Halibut fillets are done when they start to flake and are opaque in the center. 
  9. When your halibut is just about done, return your veggies to the pan. 
  10. Add your celery leaves (if using) and cilantro. 
  11. Season with salt and pepper to your taste. 
  12. Divide the halibut and veggies into serving dishes. We love serving this curry over rice. Once plated, drizzle each dish with fresh lime juice and serve immediately. 

You can easily alternate which vegetables you use in this recipe. While some like to use celery or bok choy, any quick-cooking vegetable that you like will work. Some alternatives include zucchini, yellow squash, broccoli, green beans, peas, or kale. 

Serve this halibut recipe and curry sauce over a bowl of whole grains such as jasmine rice, couscous, or even cooked lentils for a truly delicious and healthy meal. 

Feel free to alternate cilantro or mint leaves depending on their availability or your preference. Both blend beautifully with the flavors of red curry and the citrus in the lime juice. 

How to Reheat Halibut Curry: 

This recipe is straightforward to reheat because the curry broth protects the halibut from drying out. The thicker halibut steaks will also reheat more easily without drying out. 

You have two options when reheating this dish.  

Reheat in a skillet the same way you cooked it the day before...

Or

Reheat your halibut curry covered in a 275-degree oven until warmed through. 

The microwave is not the best way to reheat Alaska recipes, as it can affect the texture of your seafood, but in a pinch, make sure to cover your fish with plastic wrap if you're going to reheat it in the microwave oven.
