Classic Seafood Gumbo

Ingredients:

  • 1/2 cup vegetable oil
  • 1/2 cup all-purpose flour

  • 1 green bell pepper, diced
  • 3 stalks celery, diced
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon hot sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon dried thyme
  • 1 bay leaf
  • 1 pound shrimp, peeled and deveined
  • 1 pound crabmeat
  • 1/4 cup chopped fresh parsley
  • 4 cups cooked white rice

Instructions:

  1. Heat the vegetable oil in a large pot over medium heat. Add the flour and stir continuously until it turns a dark brown color, about 10-15 minutes.

  2. Add the onion, bell pepper, celery, and garlic to the pot and cook until the vegetables are soft, about 5 minutes.

  3. Add the chicken broth, diced tomatoes, Worcestershire sauce, hot sauce, salt, black pepper, cayenne pepper, thyme, and bay leaf. Bring the mixture to a boil, then reduce heat and let simmer for 30 minutes.
