- 1 green bell pepper, diced
- 3 stalks celery, diced
- 4 cloves garlic, minced
- 4 cups chicken broth
- 1 (14.5 ounce) can diced tomatoes
- 1 tablespoon Worcestershire sauce
- 1 tablespoon hot sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon dried thyme
- 1 bay leaf
- 1 pound shrimp, peeled and deveined
- 1 pound crabmeat
- 1/4 cup chopped fresh parsley

Heat the vegetable oil in a large pot over medium heat. Add the flour and stir continuously until it turns a dark brown color, about 10-15 minutes.
-
Add the onion, bell pepper, celery, and garlic to the pot and cook until the vegetables are soft, about 5 minutes.
-
Add the chicken broth, diced tomatoes, Worcestershire sauce, hot sauce, salt, black pepper, cayenne pepper, thyme, and bay leaf. Bring the mixture to a boil, then reduce heat and let simmer for 30 minutes.
-
Add the shrimp and crabmeat to the pot and cook for an additional 10 minutes, or until the seafood is cooked through.
-
Remove the bay leaf and stir in the parsley. Serve the gumbo over a bed of cooked white rice.
