Alaska Pollock Processing: Fillets, Mince, Surimi, Roe & Factory Trawlers

Understanding those streams helps explain why pollock is such an important commercial whitefish and, for a buyer, what separates a good frozen pollock fillet from an ordinary one.

Pollock Processing Starts With the Final Product in Mind
Commercial processors do not simply catch pollock and decide later what to do with it. Vessel type, factory configuration, season, fish condition, roe recovery, customer specifications and market demand influence the production plan. Pollock may be processed aboard a factory trawler or delivered to a shoreside plant, depending on the fishery and operation.
Firsthand Experience: Russia, Factory Trawlers and Alaska
I have worked with pollock from both the Russian Far East and Alaska. For six years I worked with Russian pollock operations involving supertrawlers, including vessel management, conversion and repair, processing operations and product sales. At one point our operation involved 12 supertrawlers. We produced pollock fillets, mince, surimi, roe, fishmeal and fish oil.
After leaving Russia in 1999, I moved into Alaska processing. I operated a seafood processing plant on Kodiak Island and worked with pollock for roughly two decades. Our production included individually frozen pollock fillets and pollock roe. Processing decisions that look minor on paper—fish condition, trimming, freezing, packaging and cold-chain control—can have a large effect on the product a customer finally cooks.
1. Pollock Fillets: The Product We Sell
Fillets are one of the most important pollock products. Commercial specifications can differ by skin, bone removal, trim, size, block or individual freezing, and intended customer. In my own Alaska operation, one focus was individually frozen pollock fillets for the U.S. market, where convenient portions could command more value than undifferentiated commodity product.
My earlier Russian operation sold fillets and mince into both European and American markets. Some of those fillets entered supply chains serving major quick-service restaurant companies, including McDonald's and Burger King. That is historical industry experience—not a claim of a current Global Seafoods North America relationship—but it illustrates how exacting large foodservice specifications can be.
For home customers, the important questions are simpler: Is the species identified? Is the package intact? Are the fillets well frozen and protected from dehydration? Are the size and trim appropriate for the recipe?

2. Pollock Mince
Mince is mechanically recovered fish meat used as an ingredient in further-processed seafood products. It is not the same product as a whole fillet and should not be confused with surimi. Mince can be valuable when uniformity and further formulation matter more than the natural shape of the fillet.
3. Surimi
Surimi is a refined fish-protein base. Pollock meat is minced, washed and refined, then stabilized and frozen for later manufacture into formed seafood products. Surimi production is more technically demanding than simply grinding fish because protein functionality, temperature control and raw-material condition matter.
In my Russian operations, surimi was one of several products made alongside fillets, mince, roe, fishmeal and oil. The economics of a factory therefore depended not on one product alone but on how effectively the catch could be separated into the right value streams.
4. Pollock Roe
Pollock roe is a distinct high-value product and should be handled separately from fillet production. In my Russian pollock work, roe was an important premium product sold into Japan. Later, on Kodiak Island, we also produced Alaska Pollock roe for the Japanese market, including sales connected with the spring auction period around March and April.
Roe quality depends heavily on maturity, condition and careful handling. A processor therefore pays attention not only to the amount of fish harvested but also to seasonal biological condition.
5. H&G and Headless Pollock
Headless-and-gutted pollock is another important commercial form. In my historical operations, headless pollock moved primarily to China, countries of the former Soviet Union and European markets including Spain, Portugal and Norway. Some markets further processed pollock into salted and dried products.
6. Fishmeal, Fish Oil and Recovery Streams
Commercial processing also creates material that is not destined for a retail fillet. Depending on the plant and operation, heads, frames and other processing material can feed fishmeal, fish-oil and other recovery streams. I produced both fishmeal and fish oil in Russian pollock operations.
It is more accurate to describe this as value recovery than to make a blanket 'zero waste' claim. Recovery rates and final uses vary by factory, vessel and market.
Factory Trawlers vs. Shoreside Plants
A factory trawler combines harvesting and processing aboard the vessel. Shoreside operations receive fish from catcher vessels and process it on land. Both models can produce high-quality seafood when the operation is designed and managed correctly.
Having worked with supertrawlers and later with a Kodiak plant, I do not consider one model automatically superior for every product. The actual process, specifications, freezing and cold chain matter more than a marketing label.
What Processing Means When You Buy Pollock Online
The industrial story matters only if it helps the customer make a better purchase. For frozen pollock fillets, look for clear species identification, intact packaging, protection from freezer dehydration, consistent portion specifications and a dependable frozen cold chain.
Frozen is not automatically inferior to 'fresh.' Freezing is a normal part of bringing this wild-caught Alaska whitefish to market, and good freezing and storage protect a product that otherwise deteriorates quickly.
