Easy Grilled Garlic Butter Oysters – San Juan Island Style

The Friday Harbor version of this recipe is not complicated. That is the point. Fresh oysters, good butter, garlic, a splash of white wine, and a hot grill. When the oyster is this quality, the preparation exists to enhance it rather than cover it up.

  1. Heat grill to medium-high.
  2. Place oysters shell-side down directly on the grill for 5–6 minutes, until they begin to open. The shell will crack slightly — that is your signal.
  3. Carefully open each oyster with an oyster knife, keeping it in the half shell and preserving as much of the liquor as possible.
  4. Add 1–2 teaspoons of garlic butter with a splash of white wine on top of each oyster.
  5. Return to the grill and cook for another 6–7 minutes until the sauce is sizzling and the edges of the oyster are just starting to curl and brown.

Serve hot with crusty bread and a cold glass of white wine. The bread is not optional — you need it to catch the butter.
