You can flambé, too!

Flambéed crab legs is an incredibly simple recipe, but some care should be taken while preparing. It takes less than 20 minutes to get those king crab clusters from the pan and onto your plate.

[CRAB]

Ingredients

  • 1 Tablespoon butter
  • 2 Tablespoons minced garlic
  • 3 cups fish stock
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2.5 pounds Giant Crab legs and claws, pre-cooked and thawed
  • 1/2 cup 80-proof vodka, room temperature
  • Melted butter

Directions

Crack the shells to let the sauce inside. In a large skillet with deep sides, heat butter over medium heat until melted.  Add garlic and saute until aromatic, being careful not to burn it. Add stock, salt, pepper, and crab legs. Cover, allowing the crab to simmer for 5 - 7 minutes.

When the crab is done, remove the cover, reduce the heat to medium high, add your vodka just around the sides of the pan to help it warm. Ignite the top of the vodka with a long match. Be mindful of the flame, and don't lean over the pan as you light. Allow the flame to burn off all the alcohol, then serve the crab with some juice from the pan and some melted butter.

For safety, keep a metal lid close by, just in case the flame gets out of hand.
