Ingredients
- 1–1.5 lb boneless steelhead salmon fillet (skin removed)
- 2 tbsp kosher salt
- 1 tbsp brown sugar or maple syrup (optional)
- Freshly ground black pepper
- Optional: alder-smoked salt for extra flavor
Step-by-Step Instructions
- Prep the Fish — Clean and dry the steelhead. Optional: lightly score the surface.
- Apply the Cure — Rub with salt, sugar (optional), and pepper. Place in a non-reactive container.
- Refrigerate to Cure — Refrigerate for 12–24 hours.
- Rinse and Dry — Rinse the fillet and air-dry on a rack in the fridge for 24–48 hours.
- Optional Cold Smoke — Cold smoke over alder wood at 150°F for 30–45 minutes for enhanced flavor.
