Pollock Roe: From Factory Trawler to Japanese Tarako & Mentaiko
January 05, 2025Most consumers know Alaska pollock for white fillets, fish sandwiches or surimi. Inside a pollock factory, however, the roe can be one of the most commercially important product streams produced from the same catch.
I worked directly with Russian pollock for about six years and, at one point, with an operation involving 12 factory trawlers. Those vessels produced fillets, mince, surimi, fishmeal, fish oil and pollock roe. I later operated seafood processing in Kodiak, Alaska, where we also produced pollock products. This article separates that firsthand processing experience from current fishery information and explains what actually happens between a female pollock entering a processing line and a roe product reaching a Japanese buyer.
Pollock Roe, Tarako and Mentaiko Are Not the Same Product
These terms are often mixed together online, but they describe different stages or products.
- Pollock roe is the egg mass recovered from female pollock, commonly handled commercially in intact roe sacs.
- Frozen pollock roe is a raw commercial product preserved for later processing and sale.
- Tarako is a prepared salted pollock roe product associated with Japanese cuisine.
- Mentaiko is seasoned pollock roe, commonly prepared with chili-based seasoning.
- Ikura is salmon roe and is a different product, with much larger separated eggs.
Frozen pollock roe is not automatically tarako or mentaiko. Those names describe downstream prepared products, not simply the roe leaving an Alaska or Russian pollock factory.
Roe Is a Planned Production Stream, Not Factory Waste
A modern pollock operation is designed around multiple commercial streams. The fish may generate fillets, mince, surimi and other products, while roe from suitable female fish is recovered separately. That changes the economics of processing because the objective is not simply to maximize fillet pounds.
Maximum fillet yield is not necessarily maximum fish value.
During a strong roe period, the condition and maturity of the roe can materially affect the value mix coming off the same production line. Experienced processors therefore look at the whole fish as a portfolio of potential products rather than treating everything outside the fillet as waste.
How Pollock Roe Is Recovered on an Industrial Line
One important correction to the simplified picture often presented to consumers is that commercial roe production does not necessarily mean workers manually opening every fish and removing the roe one fish at a time.
In the factory systems I worked with, primary processing equipment separated the relevant internal material as part of a high-speed production flow. Historical and current BAADER pollock systems show how heading, gutting, filleting and roe-recovery functions can be integrated or combined within industrial processing lines.
A simplified commercial flow looks like this:
Whole Pollock → Measurement and Positioning → Heading/Gutting → Primary Roe Recovery → Roe and Viscera Stream → Roe Selection and Grading → Freezing and Packing
At the same time, the fish trunk continues into the filleting stream:
Fish Trunk → Filleting → Skinning → Inspection/Trimming → Product Grading → Freezing
This is why roe recovery should be understood as part of factory design rather than as an afterthought following fillet production.
The Machine Recovers the Stream; People Create the Commercial Grade
Mechanization does not eliminate skilled human work. In the operations I knew, equipment performed the primary separation, while workers at the roe section selected usable roe, removed unsuitable material and separated the product according to commercial requirements.
The machine recovered the stream. People created the commercial grade.
That distinction matters. A machine can help recover roe at industrial speed, but a buyer is not purchasing every recovered roe sac as though they were identical. The commercial product depends on selection, condition, maturity, consistency and the buyer's specification.
Why Roe Maturity Matters So Much
Pollock roe changes as the fish approaches spawning. That means one kilogram of roe harvested at one stage of maturity is not necessarily commercially equivalent to one kilogram harvested at another stage.
Processors and buyers may evaluate factors such as:
- maturity stage;
- size and uniformity of the sacs;
- membrane condition and physical damage;
- color and overall appearance;
- cleanliness of separation;
- lot consistency;
- handling and preservation;
- the requirements of the downstream processor.
One kilogram of pollock roe is not economically identical to another kilogram.
This is one reason roe production is closely tied to season and fishing timing. A large catch does not automatically mean a high-value roe catch.
Why the Japanese Market Matters
Japan has long been a major specialized market for pollock roe and for prepared products such as tarako and mentaiko. In my own Russian pollock operations, roe was a particularly important product sold into the Japanese market, where quality and grading had direct commercial consequences.
Later, in Alaska, I again saw the importance of Japanese buyers and the spring roe market. The exact auction systems, buyer mix and prices change over time, so historical operating experience should not be presented as a fixed description of every transaction today. The enduring point is that pollock roe developed a market identity separate from the fillet itself.
From Frozen Roe to Tarako and Mentaiko
The raw roe produced by a factory vessel or shore plant is not the finished Japanese retail product. After commercial recovery, selection, grading and preservation, downstream processors can transform suitable roe into products with different specifications and flavor profiles.
Tarako generally refers to salted pollock roe. Mentaiko is a seasoned form commonly associated with chili and other seasonings. Recipes and processing specifications vary by producer, so these should be understood as product categories rather than one universal formula.
This distinction also explains why a processor producing frozen pollock roe and a company producing retail mentaiko are performing different stages of the value chain.
Pollock Roe vs. Salmon Roe and Caviar
Pollock roe should not be described as though it were simply a smaller version of salmon ikura or traditional sturgeon caviar.
Salmon roe is commonly separated into individual large eggs and salted as ikura. Pollock roe is much smaller and is often handled in intact sacs for downstream products such as tarako and mentaiko. Traditional black caviar comes from sturgeon and belongs to another product category entirely.
The biological material, processing methods, grading language, consumer expectations and markets are different.
Roe Changes the Economics of the Whole Pollock
On a factory trawler, the economics of one fish are distributed across several possible products. Fillets may serve U.S. and European markets. Surimi becomes a functional seafood ingredient. Roe can move into specialized Asian markets. Mince, fishmeal and fish oil can create additional recovery streams.
That is why the commercial question is not simply, “How many pounds of fillet did we make?” A more useful question is, “How much total commercial value did the factory recover from the raw material while meeting each product specification?”
The commercial value of roe influenced how the fish itself was processed.
Factory Trawler vs. Shore-Based Roe Production
The same basic commercial objective can exist in different production systems. A factory trawler catches, processes, freezes and stores products within one integrated vessel operation. A shore plant receives fish from catcher vessels and performs processing on land.
Neither format alone guarantees a superior roe product. Catch timing, fish condition, processing speed, equipment adjustment, crew performance, grading discipline, freezing capacity and cold-chain control all matter.
This is consistent with a broader lesson from pollock processing: the name of the fish does not tell you its processing history.

My perspective on pollock roe comes from working inside the production and commercial side of the industry rather than only from studying the finished consumer product. I worked with Russian factory trawlers producing pollock roe for Japanese buyers and later with Alaska processing in Kodiak.
