This is the place where the product description will appear if a product has one.
Alaska pollock (Gadus chalcogrammus) is more than a mild whitefish fillet. In Japan and Korea, pollock became connected to several very different food traditions and industrial product streams: frozen surimi, fish-paste products, pollock roe, tarako, mentaiko and dishes made from the fish itself.
Those products should not be collapsed into one category. Surimi is not imitation crab. Pollock mince is not surimi. Frozen pollock roe is not tarako or mentaiko. And pollock roe is not salmon ikura.
Understanding those distinctions explains why Asian markets have been so important to the development of the modern pollock industry.
A pollock factory can separate one catch into different commercial streams depending on equipment, season, raw-material condition and customer specifications.

The commercial lesson is important: a processor does not simply produce “pollock.” It produces specifications for different markets.
Fish-paste foods existed in Japan long before the modern pollock fishery. The major industrial change came with technology that made stable frozen surimi possible. Frozen surimi separated the production of the functional fish-protein ingredient from the location and timing of final fish-paste manufacturing.
Alaska pollock became an important raw material because its light-colored flesh, mild flavor, functional protein properties and large commercial supply fit this processing system particularly well.
Surimi is not simply ground pollock. Commercial surimi production generally involves mincing or separation of edible flesh, repeated washing and refining, concentration and dewatering of functional proteins, formulation with ingredients that protect functionality during frozen storage, and freezing as an industrial ingredient.
That frozen ingredient can later become many different foods.
In the United States, many consumers first encounter surimi as crab-style seafood. That has created a persistent misconception that the words mean the same thing.
They do not.
Surimi is an ingredient. Imitation crab is one possible finished product made from that ingredient.
Japanese fish-paste products include forms such as kamaboko and chikuwa. Other manufacturers use surimi in crab-style sticks, flakes and seafood formulations. The final product can include starches, seasonings, colors and other ingredients that are not part of a plain pollock fillet.
Minced pollock is also different. Fish can be minced without going through the washing, refining and functional-protein processing required to make commercial surimi.
I spent approximately six years working directly with Russian pollock operations. At one point, the operations I worked with included 12 factory trawlers producing fillets, mince, surimi, roe, fish meal and fish oil.
That experience is why I separate mince from surimi. They were different factory streams with different equipment, specifications and markets. A vessel configured to produce surimi required a specialized processing system beyond ordinary filleting or mincing.
Freezing capacity was also part of the production equation. A processing line can make material quickly, but the factory still has to freeze, pack and store the finished product. On a vessel, refrigeration and freezer capacity can become the bottleneck regardless of how fast an upstream machine is rated.
Pollock roe deserves to be understood as its own commercial stream. In the factory-trawler operations I worked with, roe was not treated as an incidental by-product to be picked out after filleting. Primary processing equipment separated a roe-and-viscera stream, after which workers selected and graded commercially usable roe.
The machine recovered the stream. People created the commercial grade.
Condition and maturity mattered. Roe from different fish was not economically identical, and the Japanese market placed significant value on properly graded product. In our operations, Japan was the principal high-value market for pollock roe.
This affected factory economics. The objective was not simply maximum fillet yield. A processor had to consider the commercial value of the whole fish and the relative value of fillet, roe, surimi, mince and other streams.
This distinction is frequently lost in consumer articles.
A factory trawler can recover, grade, pack and freeze pollock roe as a raw commercial product. That does not mean the vessel has produced tarako.
Tarako is a prepared salted pollock roe product associated especially with Japanese cuisine. The frozen roe shipped from a harvesting or primary-processing operation can become raw material for downstream tarako production.
In other words:
Pollock → Roe Recovery → Selection & Grading → Frozen Pollock Roe → Downstream Processing → Tarako
The distinction matters commercially because harvesting, primary roe processing and consumer-ready seasoning can occur in different facilities and even different countries.
Mentaiko is seasoned pollock roe, widely associated with a spicy chili-seasoned style. It is closely related to tarako but is not simply another word for unprocessed pollock roe.
Mentaiko is eaten with rice, used in onigiri and other prepared foods, and has also become familiar in dishes such as mentaiko pasta. Recipes and seasoning systems vary by producer and market.
The terminology can also cross cultural boundaries between Japan and Korea, so it is better to identify the actual prepared product and seasoning rather than imply that one national cuisine has a single universal formula.
“Asian market” is useful as a broad commercial phrase, but it can hide important differences.
Japan has played a major role in the development of frozen surimi technology, fish-paste manufacturing and the high-value pollock roe trade. Japanese specifications for roe, surimi and processed seafood influenced what factories produced and how product was graded.
Korea has its own pollock food culture, terminology, preparations and demand. Pollock appears in soups, dried-fish traditions, roe products and prepared foods. Korean consumption patterns should therefore be described separately rather than presented as a copy of Japanese cuisine.
China has had another role in the global pollock system: historically, it became a major secondary-processing location for frozen headed-and-gutted pollock that was thawed, filleted and frozen again for export markets. That is an industrial supply-chain role and should not be confused with Japanese roe demand or Japanese surimi technology.
Pollock roe is sometimes loosely called caviar in marketing language, but technically it is useful to keep the products separate.
Using precise terminology improves both consumer understanding and commercial credibility.
Pollock roe value changes with reproductive condition. A processor is not simply weighing kilograms of roe. Buyers evaluate condition, maturity, appearance and other grading characteristics that affect what the product can become downstream.
That means one kilogram of pollock roe is not economically identical to another kilogram. Timing of the fishing season and condition of the fish can therefore influence the product mix and economics of the factory.
In the systems I worked with, the simplified process looked like this:
Whole Pollock → Primary Processing → Heading/Gutting → Roe & Viscera Recovery Stream → Dedicated Roe Area → Manual Selection → Grading → Packing/Freezing → Frozen Pollock Roe
This is different from the popular image of workers opening every fish and manually removing each roe sac from scratch. Industrial primary processing can mechanically separate the stream; human labor then becomes critical in selecting and grading the commercially valuable roe.

The modern pollock industry developed around multiple markets rather than one universal product. In my operations, roe went primarily to Japan, while fillets and mince were sold into Europe and the United States. Surimi had its own market and technical requirements.
This matters because the value of a pollock catch is not determined only by the price of the fillet. Roe can become disproportionately important during the right season and at the right grade. Surimi can create a separate value stream from suitable flesh. Mince, fillets and residual recovery can contribute additional value depending on factory configuration.
Maximum fillet yield is not necessarily maximum fish value.
The relationship between pollock and Asia is therefore deeper than a collection of recipes. Japanese processing technology helped change how pollock protein could be stored and traded. Japanese roe demand helped make roe a carefully recovered and graded commercial product. Korean food culture created additional demand and product traditions. Chinese secondary processing later became important to global frozen fillet supply chains.
Asia did not simply become a market for Alaska pollock. Asian markets and processing technology helped shape what the modern pollock industry learned to produce from it.
Consumers buying ordinary Alaska pollock fillets are purchasing only one branch of this much larger product system. Pollock's mild flavor works well with Japanese- and Korean-inspired seasonings such as soy, ginger, garlic, sesame, scallions and chili.
