Fresh Salmon Caviar, also known as Fresh Ikura or fresh salmon roe, is offered seasonally when we have a fresh, never-frozen batch available. This listing is designed for short-season fresh roe, so the salmon species, origin, harvest timing, pack size, and price may change depending on the current catch.
Fresh Ikura & Fresh Red Caviar
Fresh ikura has a different character from previously frozen salmon roe. When available, this product is sold as fresh, never-frozen salmon caviar and is intended for customers looking for seasonal fresh red caviar with the most direct connection to the current harvest.
Because salmon roe is a natural wild-season product, pearl size, color, firmness, flavor, and availability can vary from batch to batch. Before each release, we update the listing to identify the current salmon species and important batch details.
Current Batch Information
- Salmon species: Updated for each fresh batch
- Origin: Washington State
- Harvest / production: Updated for each fresh batch

Ingredients & Preservation
Our fresh salmon caviar is minimally processed. The only added ingredient is salt — no preservatives are added. Because it is fresh, never-frozen roe without preservatives, it has a limited refrigerated shelf life.
How to Serve Fresh Salmon Caviar
- Serve chilled on blini, toast points, or crackers
- Use as fresh ikura for sushi, gunkan, or chirashi
- Pair with crème fraîche, sour cream, dill, chives, or eggs
- Add to seafood platters and cold appetizers just before serving
Storage & Handling
Fresh salmon caviar is highly perishable and should be kept refrigerated immediately upon arrival. For best quality, we recommend consuming it within 7–10 days maximum while refrigerated. Longer refrigerated storage is not recommended. Do not leave the product at room temperature for extended periods.
Availability
Fresh Washington salmon caviar is a highly seasonal product and is typically available only from August through the end of November. Availability depends on the local salmon season, harvest timing, fish returns, weather, and the current catch. Outside this short seasonal window, this product may remain sold out for an extended period.
We use this page for fresh, never-frozen Washington salmon roe when a qualifying batch becomes available, rather than creating a new product page for every short harvest.
Shipping
Shipping details for the current fresh batch will be shown when inventory is available. Fresh product requires cold-chain handling and expedited delivery.
All sales are final. Due to the perishable nature of this product, we are unable to accept returns or issue refunds.
