Rosemary and Garlic Roasted Red Snapper Fillet Recipe:
Ingredients:
- Four Red Snapper Fillets, defrosted, rinsed, and pat dry.
- One tablespoon of high-quality olive oil
- Four cloves of garlic, minced.
- One sprig of fresh rosemary finely chopped.
- One lemon cut into wedges.
- Salt and pepper to taste.
Directions:
- Preheat your oven to 450 degrees Fahrenheit
- Spray a baking sheet with non- stick cooking spray
- Sprinkle both sides of the red snapper filets with olive oil and rub it in to coat them evenly.
- Sprinkle both sides of your red snapper fillets with salt and pepper.
- Coat the non-skin side of your red snapper fillets with chopped garlic and rosemary. Let sit for five minutes before cooking.
- Drizzle a bit more oil onto the seasoned red snapper fillets.
- Roast your red snapper fillets in the oven for about 15 minutes.
- Remove from the oven and serve immediately with your favorite seafood side dishes. We recommend a fluffy rice pilaf with a simple salad to let the red snapper shine as the meal's centerpiece.

How to Cook Whole Red Snapper:

This recipe for how to grill red snapper keeps the fish whole for a few reasons. Number one, it's much easier to turn and flip your fish when kept whole. Fillets tend to fall apart more easily on the grill.
And Number two, presenting to your family and friends a centerpiece of a whole grilled fish is super impressive, despite being easy to cook!
Caribbean Grilled Whole Red Snapper:
Ingredients:
- 1-2 whole red snapper (depending on how many guests you plan on serving. One snapper will serve 2-3 people. Hopefully, you can find snapper that has already been scaled and trimmed. Rinse your fish.
- One small habanero pepper (for less heat, use half a pepper).
- 2-3 whole green onions
- 4-6 springs of fresh thyme
- 1/4 teaspoon of fresh ground black pepper
- 1/4 teaspoon of high-quality sea salt
- One Whole lemon sliced into circles
- Four tablespoons of coconut milk
- Tinfoil for wrapping the fish.
Directions:
- Using a knife, cut several shallow slices into the side of the red snapper. You will want to slice into the side of the fish's length about every inch of the fish. These cuts should be shallow, do not cut all the way through. You will use these cuts to season the inside of the fish and ensure even cooking.
- Finely chop your Habanero pepper.
- Using the back of your knife, hit your green onions to bruise them, and release their flavor without chopping them. Keep the green onions whole.
- Fold and stuff your green onions into the belly of the whole red snapper.
- Stuff some of the hot pepper and fresh herbs into your red snapper's belly with the green onions.
- Spray your tin foil with non-stick cooking spray.
- Lay your whole red snapper on the tin foil and season both sides of the fish with salt and pepper.
- Make sure to get some of the salt and pepper into the cuts you made in the side of the fish.
- Place 2-3 slices of lemon along the length of the fish and sprinkle your red snapper with coconut milk.
- Fold your tinfoil around the whole red snapper to create a sealed tin foil pouch around your red snapper.
- Let the snapper sit to marinate while you preheat your grill.
- Preheat your grill to medium heat.
- Once preheated, place your tinfoil pouches on the grill and close the lid.
- Cook your fish on one side for 10-15 minutes.
- Flip your tin foil pouch and cook for another 10 minutes.
- Red snapper is cooked through once it reaches 135 degrees. Check the inside of your fish to see if the flakes are turning from translucent to opaque.
- Be sure to warn your guests about possible bones when grilling the whole snapper.
- Serve your grilled red snapper with Caribbean inspired side dishes such as coconut rice and grilled vegetable kabobs.
Frying Red Snapper in the Air Fryer:
If you don't want to grill your red snapper, another delicious way to cook red snapper whole or fillets is using your air fryer. Simply season your red snapper with your favorite fish marinade and let sit for 30 minutes.
Leaving some of the marinade on your fish, dredge your red snapper in a light coating of flour and place in a preheated (400 degrees) air fryer.
Fry your red snapper for 5-7 minutes in the air fryer and enjoy!
