How to Grill Pacific Whiting

Pacific Whiting, also called Pacific hake (Merluccius productus), is a mild West Coast whitefish with delicate flesh. It can be excellent on the grill, but it needs gentler handling than firmer fish such as cod or halibut.

Prepare the Fish for the Grill

Our current Pacific Whiting product is sold frozen HGT, not as ready-cut fillets. Thaw it safely in the refrigerator, then portion or fillet it as desired. Pat the surface dry before adding oil or seasoning.

Pacific Whiting is naturally softer than cod. A grill basket, well-oiled foil, plancha, or cast-iron surface can make turning the fish easier and reduce breakage. If you grill directly on the grates, keep the pieces reasonably large and avoid unnecessary handling.


Basic Grilling Method

  1. Preheat the grill to medium or medium-high heat and clean the cooking surface.
  2. Oil the fish and the grill surface lightly.
  3. Season the fish and place it on the grill.
  4. Avoid moving it constantly. Let the first side cook enough to release more easily.
  5. Turn carefully with a wide spatula or use a grill basket.
  6. Cook finfish to an internal temperature of 145°F (63°C), or until opaque and easy to separate with a fork.

Exact time depends on thickness, starting temperature, and grill heat, so temperature and appearance are more reliable than a universal “minutes per side” rule.


Three Marinades and Finishes

Because Pacific Whiting has delicate flesh, keep strongly acidic marinades brief. Lemon or lime can brighten the fish, but long exposure to acid can change the surface texture before the fish reaches the grill.

Lemon & Herb

Combine olive oil, lemon zest, a small amount of lemon juice, parsley or dill, salt, and pepper. Coat shortly before grilling.

Smoky Paprika

Combine olive oil, smoked paprika, a small amount of brown sugar, salt, and pepper. This works particularly well when you want a stronger barbecue profile.

Garlic Butter Finish

Melt butter with garlic and fresh herbs and brush it onto the fish near the end of cooking or immediately after it comes off the grill.


Grilled Pacific Whiting with Lemon and Herbs

Ingredients: Pacific Whiting portions, olive oil, lemon, parsley or dill, salt, and pepper.

  1. Thaw, portion, and pat the fish dry.
  2. Brush lightly with oil and season.
  3. Grill on a well-oiled surface, turning carefully once the first side releases.
  4. Cook to 145°F (63°C).
  5. Finish with fresh lemon and herbs.

BBQ Pacific Whiting Tacos

Season Pacific Whiting portions with smoked paprika, cumin, salt, and pepper. Grill carefully, then flake the cooked fish into warm tortillas. Add shredded cabbage, avocado, cilantro, and lime. Because the fish is delicate, flaking it after cooking is often easier than trying to grill very small strips.


Pacific Whiting Foil Packet

Place a portion of Pacific Whiting on foil with sliced zucchini, cherry tomatoes, herbs, and a little olive oil. Seal the packet and grill until the fish is fully cooked. This method protects the delicate flesh and is especially useful when cooking outdoors.


Why Pacific Whiting Needs Different Handling

From my experience with West Coast groundfish, Pacific hake is noticeably softer than Pacific cod. On a grill, that means cold-chain handling, careful thawing, a dry surface, and minimal unnecessary turning matter.
