Over-salted red caviar is a real problem, usually caused by one of three things: the batch was processed with more salt than Malossol standards (3–5% by roe weight) due to lower-quality raw material being compensated with salt; the product sat in its brine longer than intended; or the customer’s palate simply prefers a lighter salt level than the product provides.
This guide covers the technique for reducing salt in already-processed red caviar at home, its scientific basis, important limitations, and storage requirements after the process.

Why salt is used in red caviar — and why reducing it is a trade-off
Salt in cured salmon roe serves three functions:
- Preservation: Salt inhibits bacterial growth by lowering water activity. This is why Malossol (low-salt) caviar has a shorter shelf life than high-salt product. The moment you reduce the salt content, you accelerate spoilage risk.
- Flavor: Salt enhances the natural briny-sweet flavor of the roe and provides the characteristic first-impression saltiness that defines the ikura eating experience. Reducing it reveals more of the natural sweetness but removes some of the complexity.
- Texture: Salt firms the egg membrane via osmotic action during curing. This is different from the membrane firmness during post-processing rinsing — the curing salt has already done its work on membrane structure. The rinsing process described below does not meaningfully firm the membrane further; it will, in fact, cause some softening due to osmotic water uptake.
The trade-off: Reducing salt in processed caviar means accepting softer membranes, a shorter post-processing shelf life (24 hours maximum, not 3–4 days), and a somewhat less complex flavor profile. If the goal is a lighter-salt product, the better long-term solution is purchasing Malossol-grade product at 3–3.5% salt from the outset, rather than rinsing higher-salt product.
The desalination method: how it works
The technique uses mild osmosis. The roe (salted to 3–10% salt by weight) is immersed in a very low-salt solution (approximately 0.1% — 1g salt per liter of water). Because the solution outside the egg is much lower in salt than the solution inside, salt diffuses outward through the semi-permeable egg membrane. The process also causes some water to move inward (osmotic water uptake), which softens the membrane slightly. This is unavoidable — the same osmotic force that pulls salt out also pushes water in.
The mild brine (1g/L) is used instead of plain water to reduce the severity of osmotic shock. Plain water would create a larger differential, potentially causing membranes to swell and rupture more rapidly. The mild brine slows the process and gives more control over the degree of salt reduction.
Step-by-step process
- Boil and cool 1 liter of filtered water: Boiling sterilizes the water, eliminating bacteria that could accelerate spoilage once the protective salt is reduced. Allow to cool completely to refrigerator temperature (approximately 35–40°F / 2–4°C) before use. Do not use warm or room-temperature water — it will accelerate membrane softening.
- Dissolve 1g of fine salt in the cold water: This creates approximately a 0.1% brine solution. Use a scale for accuracy if possible; 1g is approximately ¼ tsp of fine table salt, but measuring by weight is more reliable. The solution should taste faintly salty — barely perceptible.
- Place caviar in a fine mesh strainer: Use a fine mesh strainer to prevent roe from passing through. A cheesecloth-lined standard strainer also works. Do not use a metal strainer if possible — metal can react with the brine; use nylon mesh or food-grade plastic. Handle gently throughout; the roe is fragile.
- Submerge and gently agitate for 3–5 minutes: Lower the strainer into the prepared brine in a bowl. Gently swirl or stir the roe with a mother-of-pearl or plastic spoon for 3–5 minutes. The salt will diffuse from the eggs into the surrounding solution. For less salt reduction: 2–3 minutes. For more: 5–6 minutes maximum — beyond this, membrane softening becomes pronounced.
- Final rinse with cold sterile water: Pour additional cold boiled-and-cooled water over the caviar in the strainer to rinse away the salt-rich brine from the surface.
- Drain 10–15 minutes: Allow the caviar to drain in the strainer over a bowl. Do not press or squeeze. The roe will drain naturally; pressing will rupture membranes. Pat very gently with a paper towel if needed to absorb surface moisture.
- Transfer to an airtight glass container and refrigerate immediately: Store at 28–32°F. Consume within 24 hours. Do not attempt to store beyond 24 hours — the salt reduction significantly reduces the bacteriostatic protection of the curing salt.
Storage after desalination
24-hour maximum: This is a hard limit after rinsing, not a guideline. The reduced salt level means bacterial growth is no longer as effectively suppressed. Consume the same day as rinsing.
Temperature: 28–32°F in an airtight glass container. Avoid any temperature fluctuation.
Do not freeze after rinsing: Freezing washed caviar will rupture the egg membranes from ice crystal formation on freezing, producing mushy, broken roe on thawing. Not recoverable.
Culinary uses after desalination
Desalinated caviar has a milder, sweeter flavor profile well-suited to: blinis with crème fraîche (where the reduced salt allows the crème fraîche’s flavor to balance more equally with the roe); deviled eggs (garnish after fully cooling the eggs); sushi — desalinated roe works well in ikura don where the soy sauce on the rice provides the salt balance. Avoid using desalinated roe in pasta unless the pasta has no additional salt — the reduced brine level means the roe contributes almost no salt seasoning to the dish.
Pasta reminder: If using in pasta, add strictly off heat. The membrane is already softened from the rinsing process and ruptures even more easily than standard ikura.
