How to Open and Enjoy Fresh Sea Urchin (Uni) at Home

Sea urchin roe — known as uni in Japanese — is the edible gonads of the urchin, five lobes of soft, golden-orange tissue that line the inside of the shell. The flavor is oceanic and intensely umami, with a sweetness that varies by species and season, a mild brininess, and a creamy texture that dissolves on the tongue. Uni is among the most perishable luxury seafoods: once the shell is opened, the lobes deteriorate quickly and flavor quality drops noticeably within hours at room temperature or after 24 hours even refrigerated. For this reason, freshness and handling from the point of opening to the point of eating is the most important variable in the experience.

Species and flavor profile

Red sea urchin (Mesocentrotus franciscanus): the largest Pacific species; harvested from Alaska through Baja California. Rich, full flavor with a sweet, pronounced oceanic character. The primary species from Global Seafoods. Purple sea urchin (Strongylocentrotus purpuratus): smaller lobes, more delicate and briny flavor, common in California waters. Green sea urchin (Strongylocentrotus droebachiensis): harvested from Maine and Atlantic Canada; sweet, mild, often described as the most approachable flavor for first-time uni eaters. Japanese Ezo uni (Strongylocentrotus intermedius): the premium benchmark for Japanese sushi bars; intensely sweet with a clean finish.

Uni grades

A-grade (sashimi grade): Firm, intact lobes with a vibrant golden-orange color and no surface breakdown. Clean, sweet flavor. Suitable for nigiri, sashimi, and any preparation where appearance matters. B-grade: Slightly softer lobes, some color variation, still good flavor. Best for pasta, sauces, scrambled eggs, and preparations where the lobe structure is less visible. C-grade: Soft, broken-down lobes; strong iodine flavor. Used for processed products (uni paste, uni butter bases). Not suitable for raw direct eating.

How to open a sea urchin

Tools: Kitchen scissors or a dedicated urchin cutter. Thick rubber or cut-resistant gloves (urchin spines are sharp and can break off under the skin). A small narrow spoon. A bowl of cold saltwater: dissolve 35g (about 2.5 tbsp) of non-iodized salt per liter of cold water to approximate seawater salinity. A second clean bowl for the extracted uni.

Step 1 — Rinse: Rinse the live urchin under cold running water. Check that spines are still moving slightly — this confirms the urchin is alive. Do not use fresh water on the extracted uni; it ruptures the delicate membranes and washes away flavor.

Step 2 — Orient the urchin: Hold the urchin mouth-side up. The mouth (Aristotle's lantern) is the slightly flattened, lighter-colored opening on the bottom of the shell. This is where you cut.

Step 3 — Cut around the mouth: Insert one blade of the scissors into the mouth opening at a shallow angle, pointing upward toward the top of the shell, not downward. This is the critical technique detail: pointing the scissors downward cuts directly into the uni lobes, which sit on the inner walls just below the equator of the shell. Cut in a circular motion around the mouth, removing a disc of shell approximately 1.5–2 inches in diameter. Lift the disc off — it will have the internal organs (dark digestive tissue) attached. Discard it.

Step 4 — Remove the viscera: Inside you will see the five golden-orange uni lobes arranged symmetrically around the shell wall, with dark viscera (digestive tract, gonad support tissue) filling the center. Using the spoon, carefully scoop and discard all the dark internal matter. Work gently — the lobes tear easily. Rinse the inside of the shell lightly with the prepared saltwater.

Step 5 — Extract the uni: Slide the narrow spoon under each lobe at the point where it attaches to the shell wall and gently lift it free. Transfer each lobe to the saltwater bowl. After all five lobes are extracted, lift them from the saltwater with a small spoon and transfer to a clean plate or directly to your serving vessel. Pat very gently with paper towel if needed to remove surface water, but avoid pressing — the lobes are extremely fragile.

Step 6 — Serve or refrigerate immediately: Uni is best eaten within minutes of opening. If not eating immediately, cover and refrigerate; use within 24 hours. Flavor quality begins to decline after a few hours and degrades significantly past 24 hours even refrigerated.

How to eat uni

Raw, as-is: The simplest and best way for high-quality A-grade uni. A small amount of soy sauce (a drop, not a pool) or a tiny squeeze of yuzu or lemon. Nothing more is needed for grade A. Uni nigiri: Press a small amount of sushi rice into an oval; drape one lobe of uni over the top. Nori (a thin strip of dried seaweed) can be used as a wrapper to hold the lobe in place. Uni pasta: This is the best use for B-grade uni. Blend 4–5 lobes with 2 tbsp unsalted butter and 2 tbsp pasta cooking water into a smooth sauce; toss with just-cooked spaghetti over low heat for 30 seconds (do not boil the uni or it scrambles). Finish with lemon zest. Uni butter (for steak): Blend softened unsalted butter with uni lobes, a small amount of miso, and lemon juice. Form into a log in plastic wrap; refrigerate. Cut a disc and place on a just-plated steak — the residual heat of the meat gently warms the butter without cooking the uni. Do not melt uni butter in a pan at high heat; cooking past ~115°F (46°C) scrambles the proteins and changes the flavor significantly. Uni toast: Spread on thick toasted sourdough, finish with olive oil and fleur de sel.
