Mussels Pasta with White Wine, Garlic & Parsley

Mussels served in their shells

Pasta with mussels is a simple coastal-style meal built from briny shellfish, al dente pasta, garlic, herbs, and a light wine sauce. The recipe is straightforward, but proper mussel handling matters: keep live mussels cold, cook them until the shells open, and discard any that remain closed after cooking.

Global Seafoods’ mussel product page can be used to check current availability. Follow the handling instructions that come with the product because fresh, frozen, and previously cooked mussels are not interchangeable.

Why Mussels and Pasta Work Together

Ingredients

  • Mussels: About 1½–2 pounds live mussels, cleaned and debearded
  • Pasta: 12 ounces spaghetti or linguine
  • Olive oil: 2–3 tablespoons
  • Garlic: 3 cloves, finely chopped
  • Shallot: 1 small, diced
  • Dry white wine: 1 cup, or use seafood stock
  • Cherry tomatoes: 1 cup, halved
  • Parsley: ¼ cup, chopped
  • Salt and pepper: To taste, remembering that mussels and pasta water can add salt
  • Crushed red pepper flakes: Optional

Step-by-Step Mussels Pasta

Step 1: Prepare the mussels

Keep live mussels cold until you are ready to cook. Discard cracked or badly damaged shells. Live mussels should be closed, or close when tapped. Rinse and scrub the shells under cold running water, then pull away the fibrous beard toward the hinge.

Step 2: Cook the pasta

Bring a large pot of salted water to a boil. Cook the pasta until just al dente according to the package instructions. Reserve about 1 cup of pasta water before draining.

Step 3: Sauté the aromatics

Warm the olive oil in a large skillet over medium heat. Add the garlic, shallot, and optional red pepper flakes. Cook for about 2 minutes, just until fragrant and softened.

Step 4: Steam the mussels

Increase the heat to medium-high. Add the cleaned mussels and pour in the wine or seafood stock. Cover the skillet and steam until the shells open and the mussel meat is hot, usually about 5–7 minutes depending on size and equipment. Discard any mussels that remain closed after cooking.

Step 5: Combine the pasta and sauce

Add the drained pasta to the skillet and toss gently with the mussels and cooking liquid. Add reserved pasta water a little at a time if the sauce needs loosening. Stir in the cherry tomatoes and half of the parsley.

Step 6: Finish and serve

Taste and adjust the seasoning. Spoon the pasta into bowls, garnish with the remaining parsley, and serve immediately with crusty bread if desired.

Using Frozen Mussels

Check the package before substituting frozen mussels. Thaw them in the refrigerator and follow the label’s cooking instructions. If the frozen mussels are raw and shell-on, cook them according to the package directions and discard any shells that remain closed after cooking. If they are already cooked or removed from the shell, add them near the end and warm them gently to avoid a tough texture.

Tips for Better Mussels Pasta

  • Use clean, live mussels: A fresh shellfish aroma is normal; discard mussels with a strong sour, rancid, or ammonia-like odor.
  • Do not overcook: Mussels become chewy when held at high heat for too long.
  • Watch the salt: Mussels, wine or stock, and pasta water can all contribute salt.
  • Make it gluten-free: Use certified gluten-free pasta and check the labels on stock and other packaged ingredients.
  • Add other shellfish carefully: Clams can cook alongside mussels, while delicate products such as geoduck may need different timing.

For broader seafood handling information, review the USDA seafood food-safety guidance.

Pairing Ideas

Serve the pasta with a crisp salad, roasted vegetables, or crusty bread. For a mixed seafood version, consider adding clams. Geoduck, gooseneck barnacles, and sea urchin uni have distinct textures and should be used in recipes designed for them rather than added automatically.

Recipe 2: Mussels on Bruschetta with Garlic and Parsley

Serves: 4 as a starter | Time: 20 minutes | Best for: a dinner party starter; the mussels and their broth are served on toasted bread; elegant, simple, and dramatically presented

Ingredients

  • 2 lbs (900g) live mussels, scrubbed and debearded
  • 2 tbsp olive oil
  • 3 cloves garlic, minced (for the mussels) + 1 clove garlic, halved (for rubbing the bread)
  • ½ cup dry white wine
  • 2 tbsp unsalted butter
  • 2 tbsp fresh flat-leaf parsley, finely chopped
  • 1 tsp lemon zest
  • Salt and black pepper

For the bruschetta:

  • 8 thick slices (1-inch) sourdough or ciabatta bread
  • Extra-virgin olive oil for brushing
  • 1 clove garlic, halved (for rubbing)

Instructions

  1. Toast the bread: brush both sides with olive oil; grill or broil until golden and crispy on both sides; immediately rub one side of each slice with the cut side of the halved garlic clove; the heat of the bread will melt the garlic into the surface; set aside on a platter
  2. Heat olive oil in a large pot over medium heat; add minced garlic; cook 1 minute until fragrant; add white wine; bring to a simmer; cook 1 minute
  3. Add mussels; cover tightly; cook 5–7 minutes until all mussels have opened; discard any that remain closed
  4. Remove mussels from the pot; remove the meat from the shells; discard the shells; reserve all the broth in the pot
  5. Return the broth to medium heat; add butter; swirl until melted; add parsley and lemon zest; taste and season with salt and pepper; the broth should be intensely flavored and slightly reduced
  6. Arrange the toasted bread on a platter; spoon the mussel meat onto each slice (5–6 mussels per slice); spoon the garlic-parsley broth generously over the mussels; serve immediately

Presentation tip: serve on a large wooden board or slate; the contrast of the golden toast, the orange-tinged mussels, and the green parsley broth is visually striking; provide small forks or toothpicks for eating.

Variation: add 1 tbsp white miso dissolved in the wine before adding the mussels; the miso adds umami depth and a subtle sweetness that elevates the bruschetta significantly.

Handling and doneness

These cooking times are estimates for the stated batch. Cook shellfish thoroughly, discard mussels that remain closed after cooking, and keep raw ingredients separate from ready-to-eat food. Follow the live mussel handling guide and the product instructions.
