How to Prepare the Loin

  1. Keep refrigerated until preparation. Cut into portions of similar thickness and check for bones.
  2. Pat dry and season with olive oil, pepper and a little salt. Use a clean, lightly oiled cooking surface.
  3. Grill, pan-sear or broil, adjusting heat to brown the surface without scorching it. A thick portion may need gentler heat to finish cooking through.
  4. Check the thickest part with a food thermometer. Cook to 145°F (63°C); do not rely on a fixed number of minutes per side.

Dry aging does not make an undercooked center equivalent to fully cooked fish.

Storage After Delivery

Refrigerate promptly on arrival and follow the package’s storage and use-by instructions. The supplier’s aging period is not additional storage time at home.
