Step 1 — Marinade. Whisk all marinade ingredients together. Place tuna cubes in a shallow dish or zip-lock bag; pour marinade over. Refrigerate 30–60 minutes. Step 2 — Skewer assembly. The core problem with mixed fish-and-vegetable kabobs is that different ingredients cook at different rates. Bell pepper, onion, and zucchini need 4–6 minutes per side over high heat; tuna cubes need 2–3 minutes per side; cherry tomatoes need 1–2 minutes before they burst. If everything is on the same skewer, either the tuna overcooks while waiting for the vegetables, or the vegetables undercook while the tuna rests at medium. Recommended approach: separate tuna skewers and vegetable skewers. This lets you pull the tuna at the correct doneness while the vegetables continue cooking. Thread tuna cubes with small gaps between pieces — touching cubes steam rather than sear at the contact point.
