This Global Seafoods collaboration combines a tuna-and-crab filling with sliced sea bream on top. The distinguishing technique is preparing and slicing the sea bream for a layered roll. For a different filling, see our spicy dry-aged Ahi tuna roll.
Use sea bream and tuna specifically confirmed by the supplier for the intended raw preparation. A product name, light salting or dry aging alone does not establish suitability for raw service. Do not substitute another white fish simply because it appears in a seafood collection.

Our dry-aged fish is custom-made to order. Chamber space is limited, so finished fish may not be available for immediate shipment. Your order may wait for a chamber slot before its aging period begins. The stated aging period excludes that wait and shipping transit. Confirm the preparation and dispatch timeline before ordering for an event. Overnight shipping starts after the fish is ready.
These are assembly notes, not a standardized-yield recipe. Use modest amounts of filling so the roll closes cleanly. Check crab meat for shell fragments and drain excess moisture.
Keep fish chilled until preparation. Check the prepared fillet for remaining bones and organize a clean cutting board and sharp knife.
The original recipe uses a light sprinkling of salt for 10–15 minutes, followed by wiping away excess salt with a clean paper towel. Keep the fish refrigerated during this step. Treat it as seasoning and texture adjustment, not a parasite treatment or a way to make unsuitable fish safe for raw service.
Use controlled pulling cuts to produce thin, even slices that fit over the finished roll. Adjust the angle to the fillet shape. Wipe the blade between cuts as needed rather than forcing it through the flesh.
Lay nori on a clean bamboo mat and spread a thin, even layer of sushi rice, leaving a small clear border at the far edge. Place tuna strips and a modest amount of cooked crab along the lower third. Roll with even pressure and set seam-side down.
Cut the roll with a sharp, lightly dampened knife. Top each piece with a sea bream slice. If using food wrap to shape the roll, remove all of it before serving.
Serve with soy sauce, ginger and wasabi. Prepare manageable quantities and keep fish chilled until needed. Keep raw-fish utensils separate from ready-to-eat ingredients.
FDA seafood guidance recommends thorough cooking as the safest approach and advises pregnant people, children, older adults and those with weakened immune systems to avoid raw or undercooked seafood. Freezing can address parasites but does not kill all harmful germs.
For a cooked roll variation, use fully cooked fish with cooked crab and omit the raw sea bream topping; cucumber or avocado can replace it. Follow package storage and use-by directions for all seafood. Do not age tuna in a household refrigerator for this recipe.
Prepare short-grain sushi rice using a suitable recipe or package directions. Avoid overfilling, keep the rice layer even and use gentle pressure. A clean, sharp blade helps keep cut pieces intact. Assemble close to serving and follow appropriate storage directions for prepared rice and fish rather than relying on a blanket 24-hour sushi shelf life.
