How to Prepare Sturgeon for Kebabs

  1. Pat the fillet dry and inspect it carefully for any remaining cartilage or connective tissue.

How to Grill Sturgeon Kebabs

  1. Preheat the grill to medium-high heat, approximately 400–450°F at the grate.
  2. Clean the grate and oil it carefully to reduce sticking.
  3. Place the skewers over direct heat.
  4. Grill for approximately 3–4 minutes on the first side, then turn carefully.
  5. Continue cooking and rotating as needed until the fish is opaque and reaches 145°F in the center of the thickest cube.
  6. Remove the skewers and rest them for 2–3 minutes before serving.

Russian-Style Citrus and Thyme

Miso-Ginger
