7-Day, 14-Day and Golden Ora Options
- 7-day: approximately 10 lb format.
- 14-day: approximately 10 lb format with a longer aging period.
- 10-day Golden Ora: a separate 45–50 lb fish option. Confirm availability and supplied preparation before ordering.
The Golden Ora option is a substantially larger order. Confirm the cut, head and gut removal, and usable yield for your selection. Do not plan portions as though all three options were the same package. Choose aging duration by your preferences and the actual product; a longer period does not guarantee a softer texture or a better result for every diner.
Custom-Made Orders: Plan Ahead
Our dry-aged fish is custom-made to order. Chamber space is limited, so finished fish may not be available for immediate shipment. Your order may wait for a chamber slot before its aging period begins. Aging time excludes that wait and shipping transit. Confirm the estimated preparation and dispatch timeline before ordering for an event. Overnight shipping begins after the fish is ready; it does not mean next-day dispatch.

Portion Before Cooking
Keep the fish chilled while organizing your workspace. Confirm whether the supplied format needs further cutting or trimming. Check portions for bones and group pieces of similar thickness so they can be cooked together. Pat the surface dry just before cooking.
Pan-Searing or Oven Roasting
Pan-searing: Use a suitable skillet with a little cooking oil. For skin-on portions, start skin-side down and adjust the heat if the exterior browns too quickly. Turn carefully and continue cooking until the center reaches the intended doneness. A browned surface alone does not establish that the center is cooked.

Roasting: Place evenly sized portions on a suitable tray and cook in a preheated oven. Check the thickest portion with a thermometer; large pieces need a different timetable from thin portions. You can also finish a seared portion in the oven when its exterior is browned before the center is ready.
FDA seafood guidance recommends 145°F internally for most seafood. This page does not provide a validated low-temperature sous vide pasteurization schedule. Dry aging alone does not establish suitability for sashimi or crudo.
Accompaniments
Try lemon and dill, a butter sauce served separately, or a light ponzu-style sauce. Roasted fennel, green beans, peas, rice or potatoes offer several ways to build the plate. Start with modest seasoning and adjust to taste rather than treating one sauce as essential.
After Delivery
Refrigerate promptly and follow package storage, use-by and thawing instructions. Supplier aging time is not extra storage time at home. Plan the larger formats around portioning capacity and the product’s storage window.
