Fresh Salmon Caviar, also known as fresh ikura or fresh salmon roe, is reserved for qualifying ready-to-eat, never-frozen salmon caviar offered during the fresh season. Because availability depends on current fishing and production, the salmon species, origin, harvest timing, package size, price, and exact batch specifications may change with each release.
Currently sold out. We keep this page active between fresh runs so returning customers have one consistent product page for seasonal fresh ikura rather than multiple short-lived listings.
Fresh Ikura: Ready to Eat, Not Raw Unprocessed Roe
This product is finished salmon caviar that has been cleaned, cured, drained, packed, and kept fresh without a freezing cycle. It is different from our Unprocessed Salmon Roe, which is raw material intended for customers who understand how to clean and cure salmon eggs safely.
If you are looking for frozen or previously frozen ready-to-eat salmon caviar by species, compare the available products in our Red Caviar, Salmon Roe & Ikura collection.

How to Serve Fresh Salmon Caviar
- Serve chilled on blini, toast points, crackers, potatoes, or eggs.
- Use as fresh ikura for sushi rice, gunkan, chirashi, or hand rolls.
- Pair with crème fraîche, sour cream, dill, chives, or simple buttered bread.
- Add after cooking so direct heat does not toughen the egg membrane.
Storage, Shipping & Seasonal Availability
Fresh salmon caviar requires continuous refrigeration and expedited cold-chain delivery. Follow the storage and handling instructions supplied with the current batch. Do not rely on a universal shelf-life or freezing recommendation because the exact formulation and packaging may vary by production lot.
Availability depends on salmon runs, fishing conditions, weather, harvest timing, processing capacity, and customer demand.
