How to Grill King Crab Legs: Raw vs. Precooked Method

Grilling king crab works for both raw and precooked products, but the technique changes depending on what you bought. Check the package or product description first. Precooked crab only needs reheating; raw crab requires full cooking.

Ingredients

  • About 2 lb king crab legs or sections, thawed
  • 2 tbsp melted unsalted butter or olive oil
  • 2 garlic cloves, finely minced
  • 1 tsp paprika, optional
  • Black pepper

Step 1: Thaw Safely

Thaw frozen crab in the refrigerator when possible. For faster thawing, keep it in a leak-proof package and use cold water. Do not thaw seafood on the counter or in warm water.

Step 2: Identify Raw or Precooked

Do not assume every frozen king crab leg is precooked. Read the label. This distinction matters more than the marketing size name because raw crab must be cooked fully while precooked crab should only be heated without unnecessary additional cooking.

Step 3: Prepare the Legs

For easier serving, use kitchen shears to cut along the shell without cutting the leg completely apart. This exposes some meat to the butter and makes extraction easier at the table. Leaving much of the shell intact also protects the meat from direct grill heat.

Step 4: Make the Garlic Butter

Combine melted butter or olive oil with garlic, paprika, and black pepper. Brush the crab lightly. Reserve fresh lemon for finishing so its flavor remains bright.

Step 5: Grill

Preheat the grill to moderate heat and clean the grates. Place the crab primarily shell-side toward the heat. Close the grill as needed to warm the thicker sections evenly.

For precooked crab, grill only until the meat is hot throughout. For raw crab, cook fully; USDA lists 145°F (63°C) as the minimum internal temperature for fish and shellfish, and FDA guidance describes cooked crab meat as pearly and opaque.

Leg thickness, starting temperature, grill design, and raw-versus-precooked condition all affect timing, so a universal 8–11 minute rule is not appropriate.

Should You Grill the Meat Side Directly?

A brief exposure can add browning to split legs, but prolonged direct heat can dry the meat quickly—especially if the crab is already cooked. Shell-side heating is the more forgiving starting point. If you turn a split leg meat-side down, watch it closely.

Serve

Red and golden king crab are different species, but neither requires a fundamentally different grilling method solely because of the species name. Product thickness and whether the crab is raw or precooked are more important to the cooking process.
