What You Need

  • Whole sea urchin
  • Protective kitchen gloves
  • Kitchen scissors or an appropriate sea urchin opening tool
  • Small spoon
  • Clean bowl and cold salted water for gentle rinsing
  • Paper towels

Step 1: Handle the Shell Carefully

Sea urchin spines can be sharp. Wear protective gloves, work on a stable surface, and handle the shell deliberately rather than squeezing it.

Step 2: Open Around the Mouth

Turn the sea urchin so the mouth side is accessible. Carefully cut an opening around the mouth area, keeping the tool close to the shell so you do not damage the uni inside. Remove the cut section and drain the shell.

Step 3: Remove the Dark Internal Material

Inside the shell, the edible uni lobes are arranged around the inner wall. Gently remove the darker internal material without crushing the uni. Work slowly; the lobes are delicate.

Step 4: Lift Out the Uni

Slide a small spoon beneath each lobe and gently lift it from the shell. Transfer the uni to cold salted water briefly if needed to remove remaining debris, then lift it out carefully and allow excess moisture to drain. Avoid aggressive rinsing or pressing.

Step 5: Serve or Chill Promptly
