Important variables include humidity, temperature, light cycle, population density, nutrition, calcium availability, substrate, hygiene, and breeding condition.
Land snails are highly dependent on moisture. Too little humidity can reduce activity and reproduction; poorly managed excessive moisture creates sanitation problems. Once a breeder is ready to lay, it seeks appropriate soil and buries its eggs. Some commercial systems use individual or controlled laying containers, allowing workers to locate the egg clutch rather than searching a large growing area.
After a snail deposits its clutch, the producer carefully removes the eggs from the laying substrate. Fresh eggs may have soil particles attached. The eggs must be separated without crushing their outer structure. A worker then has to distinguish good intact eggs from broken, damaged, abnormal or otherwise unsuitable eggs.
This is one reason automation is difficult. The product is small, fragile and irregularly positioned in soil. Labor becomes a major component of production cost.

Researchers studying Cornu snail eggs examined material at different stages of commercial production for important pathogens. They did not detect Salmonella or coagulase-positive staphylococci in the tested finished product. However, bacteria from the Listeria genus were found at different production stages, and Listeria monocytogenes was confirmed in samples of finished product.
That doesn't mean commercially produced snail caviar is inherently unsafe. It means processing controls matter. A producer should understand sanitation, temperature control, microbiological testing and shelf-life validation.
It also means: do not dig up wild snail eggs, rinse them and eat them raw.
People hear "caviar" and expect salinity and the sea. Snail caviar doesn't naturally have a marine flavor because the animal lives on land. Scientific and commercial descriptions repeatedly use characteristics such as: earthy, nutty, oak, mushroom, woodland.
Commercial U.S. snail caviar goes further, describing notes of moss, herbs, carrot and forest floor. Instead of thinking about Osetra or salmon roe, imagine the flavor environment surrounding mushrooms, roots, herbs and damp woodland -- then add salt and the physical sensation of a caviar-sized pearl bursting in the mouth.
Good snail caviar isn't simply a salty liquid packaged inside a white ball. The membrane provides resistance. Some commercial producers describe a noticeably sturdy outer membrane that does not burst immediately. Pressure from the teeth eventually breaks the pearl and releases the contents -- giving snail caviar a two-stage sensory experience: first resistance, then release.
Processing becomes especially important here. Too much heat or an inappropriate preservation process could make the membrane unpleasantly tough. Poor handling could leave broken eggs and liquid in the container. Visual integrity and texture are therefore major quality characteristics.

The reported caloric value was only approximately 34–39 calories per 100 grams -- remarkably different from traditional fish roe. Sturgeon caviar and salmon roe contain substantially more protein and fat.
Research analyzing the fatty-acid profile of Cornu snail eggs found that more than 75% of the identified fat was saturated fatty acids. Polyunsaturated fatty acids represented only a very small portion of the already tiny total fat content. A seller should not transfer nutritional claims associated with salmon roe or sturgeon caviar to snail caviar.
