Its mild flavor pairs well with bold condiments (soy sauce, sesame, lime) without competing with them. Ahi tuna provides approximately 25g of complete protein per 3-ounce serving with very low fat content and meaningful quantities of vitamin B12, selenium, and niacin. Pat the tuna steaks dry with paper towels -- dry surface = better sear. Season with salt and white pepper. Place the tuna steaks in the pan; sear for 1-2 minutes per side without moving -- the sesame seeds should turn golden and the exterior should be deeply browned; the center should remain rare-to-medium-rare (warm but still red/pink; internal temperature 115-125°F). Do not press down on the tuna during searing. Remove from heat immediately after the second side is seared.
Rest for 1-2 minutes. Slice thinly against the grain (1/4-inch slices) -- slicing against the grain shortens the muscle fibers and produces a more tender bite. Fan the slices on the plate; drizzle with soy sauce and a squeeze of fresh lime juice. Serve with steamed vegetables, mixed greens, or steamed rice.
