How to Properly Store Caviar: Expert Tips for Maximum Freshness
How to Store Caviar Properly
Caviar and salmon roe are highly perishable. The safest and most accurate rule is to keep the product continuously refrigerated according to the temperature and shelf-life instructions printed on its package. Different cures, packaging methods and products can have different storage requirements, so the producer’s label takes priority over a universal timetable.
Keep the Cold Chain Intact
Refrigerate caviar promptly after delivery and keep it in a consistently cold part of the refrigerator rather than the door. Minimize unnecessary temperature swings and return unused product to refrigeration promptly after serving.

Keep the Original Container Sealed
Until you are ready to serve it, leave caviar in its original sealed package. After opening, keep it covered, use clean utensils and follow the package directions for how quickly it should be consumed.
Should You Freeze Caviar?
Do not assume every caviar should be frozen. Freezing can damage egg texture, and the effect varies by species, cure and processing method. If a product is sold frozen, follow its thawing instructions. If it is sold refrigerated, follow the producer’s storage directions rather than freezing it automatically.
Serving After Storage
Serve caviar chilled. A closed container can be placed over ice during service to help maintain temperature. Keep meltwater out of the caviar itself and use clean serving utensils.

Signs to Discard the Product
Do not eat caviar or roe if the package is damaged, leaking or swollen, if the product has been held outside safe refrigeration for an uncertain period, or if it has an abnormal odor or appearance. When safety is uncertain, discard it rather than tasting it to decide.
Storage Checklist
- Follow the temperature and use-by instructions on the package.
- Refrigerate promptly after delivery.
- Keep the container sealed until use.
- Use clean utensils and minimize handling.
- Return leftovers to refrigeration promptly.
- Do not rely on a generic shelf-life table when the product label provides specific instructions.
