Yellowfin has a firm, dense texture and a moderately rich flavor — more assertive than albacore, less fatty than bluefin. The flesh is deep red when raw and turns a light tan-pink when cooked. It is the most versatile tuna for cooking: it holds up to grilling, searing, and smoking without falling apart, and its flavor is bold enough to stand up to assertive seasonings without being overwhelmed.
Yellowfin tuna sustainability varies significantly by ocean and fishing method. Pacific yellowfin caught by pole-and-line or troll is generally well-managed and rated "Best Choice" or "Good Alternative" by Seafood Watch. Atlantic yellowfin is more variable. Purse seine-caught yellowfin (the most common commercial method) has higher bycatch rates, particularly of juvenile bigeye tuna and non-target species. When buying yellowfin, look for pole-and-line or troll-caught certification.

Atlantic bluefin is the largest tuna species — it can reach 10 feet in length and over 1,000 lbs, though most commercially caught fish are 200–600 lbs. It is found in the North Atlantic Ocean and the Mediterranean Sea. Atlantic bluefin is a warm-blooded fish (one of the few fish species that can regulate its body temperature), which allows it to hunt in cold northern waters where other tuna cannot survive. It is extraordinarily long-lived — individuals can live 40+ years — and slow to mature (it does not reach sexual maturity until age 8–12).
Atlantic bluefin tuna was severely overfished throughout the 20th century, driven primarily by the Japanese sushi market’s demand for hon maguro (the highest-grade tuna for sushi and sashimi). At its lowest point in the 1990s, the Atlantic bluefin population had declined by approximately 80% from its 1970 levels. Since then, international management through ICCAT (the International Commission for the Conservation of Atlantic Tunas) has produced a partial recovery — the population has increased significantly from its historic lows, and ICCAT has increased catch quotas in recent years in response to the recovery. Recovery is ongoing but incomplete. Seafood Watch rates Pacific bluefin as "Avoid" for most sources.
Bluefin has the highest fat content of any tuna species — particularly in the toro (belly) sections, which can have a fat content comparable to wagyu beef. The flesh is deep red, rich, and buttery, with a complex umami flavor that is unlike any other tuna. When smoked, bluefin absorbs smoke deeply while remaining moist and tender due to its high fat content.

Albacore is found in temperate and tropical waters of all three major oceans. It is smaller than yellowfin or bluefin — typically 20–40 lbs — and is distinguished by its exceptionally long pectoral fins (which give it the nickname "longfin tuna"). Albacore is the only tuna species that can legally be labeled "white tuna" in the United States — all other tuna must be labeled "light tuna" in canned form.
Albacore has the mildest, lightest flavor of the major tuna species. Its flesh is lighter in color (pale pink to off-white when raw, white when cooked) and has a softer, more delicate texture than yellowfin or bluefin. It is the best choice for consumers who find yellowfin or bluefin too assertive. When smoked, albacore produces a delicate, lightly smoky product that is excellent for flaking into salads, spreads, and pasta.
North Pacific albacore caught by pole-and-line or troll is one of the most sustainable tuna options available — rated "Best Choice" by Seafood Watch. It is a fast-growing species with a relatively short lifespan (12–15 years), which makes it more resilient to fishing pressure than bluefin. South Pacific and North Atlantic albacore sustainability varies by fishing method.

Bigeye tuna is found in tropical and subtropical waters of the Pacific, Atlantic, and Indian Oceans. It is similar in size to yellowfin (up to 400 lbs) but has larger eyes (an adaptation for hunting in deeper, darker water) and a higher fat content. Bigeye is the second-most prized tuna for sushi after bluefin — its fat content and flavor are intermediate between yellowfin and bluefin.
Bigeye tuna is overfished in most ocean regions. It is particularly vulnerable to purse seine fishing because juvenile bigeye associate with floating objects (including fish aggregating devices, or FADs) and are caught incidentally in large numbers when purse seiners target yellowfin and skipjack around FADs. Seafood Watch rates bigeye tuna as "Avoid" for most fishing methods and origins. Consumers should avoid bigeye tuna when possible.

Skipjack is the smallest and most abundant of the major commercial tuna species — typically 5–20 lbs. It is found in tropical and subtropical waters worldwide and is the most commercially important tuna species by volume — approximately 60% of the global tuna catch is skipjack. It is the primary species used in canned light tuna.
Skipjack has the most assertive, "fishiest" flavor of the major tuna species. Its flesh is darker and more strongly flavored than yellowfin or albacore. It is rarely used for sushi or sashimi in the US market. When smoked, skipjack produces a bold, intensely flavored product that is best used in preparations where the smoke and other flavors are assertive (spicy preparations, heavily seasoned spreads).
Skipjack is the most sustainable of the major tuna species — it is fast-growing, short-lived (3–5 years), and highly abundant. Pole-and-line caught skipjack is rated "Best Choice" by Seafood Watch. It is the recommended choice for consumers who prioritize sustainability.
Skipjack has the lowest mercury content of any common tuna species (~0.128 ppm mean, per FDA data) — significantly lower than yellowfin or albacore. It is in the FDA’s "best choices" category for all populations including pregnant women and children.

"Ahi" is the Hawaiian name for two tuna species: yellowfin tuna (Thunnus albacares) and bigeye tuna (Thunnus obesus). In most US markets, "ahi" refers to yellowfin tuna; in Hawaii and some high-end restaurants, it may refer to bigeye. "Regular tuna" in the US context usually means canned light tuna, which is primarily skipjack. In practice, it is a marketing term used by fish sellers to indicate that the fish is of sufficient quality and freshness to be eaten raw. What actually matters for raw fish safety: (1) Freezing: the FDA recommends that fish intended for raw consumption be frozen at -4°F (-20°C) for 7 days, or at -31°F (-35°C) for 15 hours, to kill parasites; most commercially sold "sushi-grade" tuna has been frozen to these specifications; (2) Freshness: the fish should be very fresh, with no off smell, firm texture, and bright color; (3) Source: buy from a reputable fishmonger or seafood supplier who can confirm the fish has been properly handled and frozen; (4) Species: tuna is generally considered lower-risk for parasites than salmon or other fish species; however, the FDA freezing recommendation applies to all fish intended for raw consumption. "Sushi-grade" from a reputable supplier is generally safe for raw consumption; "sushi-grade" from an unknown source with no freezing history is not.
