Ingredients
- 4 large eggs
- 1 tbsp unsalted butter
- 1 tbsp crème fraîche, optional

- About 1 oz prepared salmon caviar
- Chives or dill
- Toast or brioche, optional
Method
- Whisk the eggs until combined.
- Melt butter over low to medium-low heat. Add eggs and cook gently, stirring or folding until softly set.
- Remove from heat while the eggs are still tender. Stir in crème fraîche if using.
- Plate the eggs and allow strong visible steam to subside.
