Refrigerated Salmon Roe
Refrigerated roe is kept cold rather than frozen during its current storage period. It can offer excellent texture when the product is fresh and the cold chain has been maintained. Shelf life depends on cure, packaging, processing method and whether the container has been opened, so follow the product label.

Frozen Salmon Roe
Proper freezing can extend storage and make seasonal salmon roe available beyond the harvest period. Freezing quality depends on the roe, packaging, freezing process and subsequent temperature control. A well-handled frozen product can be very good; freezing should not automatically be treated as evidence of inferior roe.
Does Freezing Change Texture?
It can. Ice formation and temperature fluctuations can affect delicate egg membranes, particularly if the product is poorly packaged or repeatedly thawed and refrozen. The degree of change varies by product and process, so avoid universal claims that frozen roe is always firmer, fresher or nutritionally superior.
How to Thaw Salmon Roe
If the product is sold frozen, follow its package instructions. In general, controlled thawing under refrigeration is preferable to rapid warming. Do not microwave salmon roe or use hot water to accelerate thawing.

Ready-to-Eat Does Not Mean “Raw Is Safe”
Commercial ready-to-eat ikura has been processed for its intended use. That is different from Unprocessed Salmon Roe. Freezing by itself should not be presented as a universal guarantee that raw unprocessed roe is safe to eat.
Choosing the Better Product
