Geoduck (Panopea generosa) has two useful textures: a firm, crisp siphon and softer body meat. The key to good results is careful cleaning, keeping the shellfish cold, and matching each part to the right preparation.

How to Clean Geoduck

  1. Keep it cold. Refrigerate live shellfish until you are ready to prepare it.
  2. Loosen the skin. Briefly dip the geoduck in hot water, then move it to an ice bath. The goal is to loosen the tough outer siphon skin, not to fully cook the meat.
  3. Peel and open. Remove the loosened skin, open the shell and separate the edible meat from the viscera.
  4. Clean the siphon. Split it lengthwise and rinse away sand or grit.
  5. Separate the cuts. Keep the firm siphon for thin slicing or quick cooking and the softer body meat for soups, chowder or other cooked preparations.

Sashimi-Style Geoduck

Thinly sliced cleaned siphon can be served with soy sauce, ponzu, wasabi, yuzu or lemon. A brief blanch used during cleaning does not make the interior fully cooked. Raw or undercooked molluscan shellfish can contain foodborne pathogens, including Vibrio; freshness and live condition do not eliminate that risk. Quick Stir-Fry

Slice the siphon thinly. Heat a wok or skillet, cook aromatics such as garlic, ginger and scallions, then add geoduck near the end. Steamed Geoduck

Steaming is a straightforward cooked preparation. Keep pieces relatively even so they cook consistently, and cook shellfish thoroughly when food-safety risk reduction is the priority. Ginger, scallions and a light soy-based sauce pair well with the natural sweetness.

Hot Pot

Thin slices can be cooked in simmering broth with mushrooms, tofu and greens. Texture changes quickly with heat. If serving to people for whom foodborne illness poses a higher risk, use a thoroughly cooked preparation rather than a brief dip.

Geoduck Chowder

The softer body meat works well in chowder. Build the soup with onion, celery, potatoes and seafood or clam stock, then add chopped geoduck toward the end so it does not become tough. Cream, thyme, parsley and black or white pepper are natural additions.

Raw Shellfish Food Safety

Buying from an approved commercial source and maintaining refrigeration are important controls, but raw shellfish is not risk-free. People at increased risk of severe foodborne illness should avoid raw or undercooked shellfish. Thorough cooking provides the lowest microbial risk. A short blanch intended only to remove the siphon skin is not equivalent to thorough cooking.

5. Pacific Northwest Geoduck Chowder

Ingredients: chopped geoduck body meat, onion, celery, potatoes, clam or seafood stock, milk or cream, butter, herbs and optional bacon.

  1. Cook onion and celery until softened.
  2. Add potatoes and stock and simmer until the potatoes are tender.
  3. Add milk or cream and seasonings.
  4. Add geoduck near the end of cooking and cook thoroughly without prolonged boiling that can toughen the meat.

A brief blanch to loosen the siphon skin is a preparation step, not full cooking. Cook raw seafood thoroughly; the general temperature recommendation is 145°F. Raw preparations carry additional risks.
