How to Choose Lobster: Size, Condition & Product Format
Choosing lobster is easier when you separate three questions: are you buying a live whole lobster or a tail, what size fits the meal, and is the product in good condition? Species and product format matter more than broad claims that one lobster is universally “better.”

Choose the Product Format First
- Live whole American lobster: includes tail, claw, knuckle, and body meat and requires live handling and cooking.
- Raw frozen lobster tails: convenient for broiling, grilling, baking, steaming, or poaching.
- Cooked lobster: useful when preparation time matters; follow the product's storage and reheating instructions.
How Much Lobster Do You Need?
There is no single “perfect” lobster size. Larger whole lobsters provide more total meat, while smaller lobsters can be easier to portion for individual servings. For tails, compare the actual tail weight and number of pieces in the package. For whole lobster, compare the listed whole-animal weight rather than assuming a fixed edible-yield percentage.

What to Look for When Buying Live Lobster
A live lobster should arrive alive and responsive. Keep it cool and moist, but do not submerge it in fresh water and do not seal it in an airtight container. Follow the seller's live-arrival and handling instructions and cook live lobster promptly.
If a shipped lobster arrives dead or you are uncertain about its condition, do not rely on a generic internet rule. Follow the seller's arrival policy and applicable food-safety guidance before deciding whether it is suitable to use.
Hard-Shell vs. New-Shell Lobster
Lobsters grow by molting. A recently molted lobster has a newer, more flexible shell; as the shell hardens, the space inside fills as the animal grows. Shell condition can therefore affect meat yield and shipping durability. It should not be used to make absolute claims about sweetness or quality.

American Lobster vs. Spiny Lobster
American lobster (Homarus americanus) has large front claws as well as tail and knuckle meat. Spiny lobsters do not have those large claws and are commonly sold as tails.
