Ask where the oysters are from. Ask whether the restaurant can provide farm, growing-region, or harvest information for the oysters currently offered. Clear origin information can help you understand what you are ordering. The farm and region tells you the flavor profile before you order — Gulf oysters are large and mild; New England oysters are briny and mineral; Pacific Northwest oysters are sweet and cucumber-fresh; Pacific Coast oysters vary by micro-terroir.
Check turnover. Happy hour deals only make sense if the restaurant is doing enough volume to move oysters quickly.
