Ora King Salmon is the trade name for a selectively bred line of Chinook salmon (Oncorhynchus tshawytscha) farmed exclusively by New Zealand King Salmon in the Marlborough Sounds. The breeding program began in the 1990s and selects for intramuscular fat content, pigmentation, and flesh texture over generations — the result is a salmon with marbling levels that no wild Chinook consistently achieves. Its fat-to-protein ratio, the deep orange astaxanthin-driven color, and the consistently controlled harvest weight (typically 8–10 lb) have made it a reference product at high-end restaurants globally.
New Zealand King Salmon began selective breeding in the Marlborough Sounds in the mid-1990s, choosing Chinook as the base species for its naturally higher fat content relative to Atlantic salmon. The Marlborough Sounds environment — deep, cool, high-flow tidal channels at the northern tip of New Zealand’s South Island — provides water temperatures of 14–17°C year-round, which is the optimal range for Chinook growth and fat accumulation. Salmon are raised at low density; the program operates under New Zealand’s Aquaculture Management Areas framework. Harvest size is standardized for consistent fillet thickness, which is part of why restaurants can specify Ora King with confidence. Fat content and marbling: Ora King has one of the highest intramuscular fat levels of any farmed salmon — typically 18–22% fat by weight versus 12–15% for standard farmed Atlantic salmon. The fat is distributed as marbling through the muscle tissue rather than concentrated at the belly, producing a silky texture throughout the fillet rather than just the fatty belly cuts. Astaxanthin and color: The diet includes controlled astaxanthin levels which produce a deep, consistent orange-red pigmentation — more uniform than wild Chinook, which varies significantly by run and diet. Astaxanthin is also an antioxidant that contributes to shelf life and is associated with reduced oxidative stress in humans. Flavor: Rich, buttery, and mild with a clean sweet finish. The high fat buffers the “fishiness” that comes from lipid oxidation in leaner fish, which is why Ora King works well raw (sashimi, ceviche) where lean fish would taste more pronounced.

Grill: Oil the grates with avocado or grapeseed oil (not olive oil — smoke point too low for grill temperatures). Grill 3–4 min per side for a 1-inch fillet; pull at 130–135°F.
