Red Salmon Caviar: Understanding Value Grade
Salmon roe is graded for characteristics such as pearl integrity, texture, color, cleanliness and overall presentation. A value or non-standard lot may contain softer pearls, more variation or a less uniform appearance than a premium presentation grade.
That does not mean every value-grade lot is identical to premium product. Broken eggs and softer texture can change the eating experience, so grade should be described accurately rather than promising “no flavor compromise.”
When Value Grade Makes Sense
Value-grade roe can work well when individual pearl appearance is less important: toast, eggs, pasta, dips and mixed dishes. For sushi, blini service or premium plating where clean individual pearls are part of the presentation, a higher visual grade may be preferable.

Serving Ideas
Use salmon roe on buttered toast, scrambled or deviled eggs, potatoes, cucumber, cold appetizers and rice. It can also finish pasta or risotto; add it after cooking rather than exposing it to direct heat.

Storage
