Salmon Roe (Ikura)

Salmon roe, commonly called ikura in Japanese cuisine and red caviar in many retail markets, is known for relatively large translucent eggs and a pronounced pop. Flavor and firmness vary by salmon species, maturity, cure, and processing lot.

Trout Roe

Commercial trout roe comes from farm-raised trout. It is generally smaller than salmon roe and can provide a similar bright appearance and popping texture in a more compact format. It is useful on sushi, tartare, seafood appetizers, eggs, and small bites where large salmon eggs might dominate the presentation.

Tobiko

Tobiko, flying-fish roe, is much smaller than salmon or trout roe. Its fine, crisp texture makes it especially useful as a topping or garnish on sushi rolls and other Japanese-style dishes. It serves a different culinary role from large salmon roe rather than acting as a direct substitute.

Traditional Sturgeon Caviar

Traditional caviar comes from sturgeon. The eggs are smaller than most salmon roe and the experience is usually more delicate in texture and flavor, although characteristics vary by sturgeon species and producer. It is often served simply so the roe itself remains the focus.

Which Roe Is Best for Sushi?

For a large, visually dramatic roe with a distinct pop, salmon roe is a strong choice. For smaller eggs with a similar red-orange presentation, trout roe can work well. For a fine, crisp garnish on rolls, tobiko fills a different niche. Traditional sturgeon caviar is better suited when the goal is a more delicate luxury accent rather than the classic ikura texture.
