What Is Caviar?

In the traditional and regulated sense, caviar refers to processed roe from sturgeon. Different sturgeon species and hybrids produce caviar with different egg sizes, colors, textures, and flavor profiles. It should not be reduced to a single description such as simply “black” or “buttery.”
