How to Separate Salmon Roe from the Skein
Fresh salmon roe is held inside a membrane called the skein. Before the eggs can be cured into ikura, they need to be separated with as little breakage as practical. The best technique depends on egg maturity, species, batch size and the condition of the roe.

Start with Clean, Cold Roe
Raw roe is highly perishable. Keep it cold, work with clean hands and sanitized food-contact tools, and avoid leaving it out longer than necessary. Follow the handling instructions supplied with the roe.

Method 1: Gentle Hand Separation
For a small batch, open the skein and gently work the eggs away from the membrane with your fingers. Remove pieces of membrane as you go. This is slow but gives good control when the eggs are delicate.
Method 2: Screen or Grid Separation
Processors often use a food-safe screen or grid sized for the roe. The skein is worked gently across the surface so individual eggs pass through while much of the membrane remains above. The correct opening size and pressure depend on the species and maturity of the eggs; forcing delicate roe through an unsuitable screen increases breakage.
About Warm-Water Techniques
Home recipes sometimes recommend warm water to loosen the skein. Temperature and exposure time can materially change membrane texture, and one fixed temperature is not appropriate for every lot. For a consumer guide we prefer gentle separation and product-specific handling rather than presenting a universal hot-water formula.

Remove remaining membrane and visibly damaged material carefully. Avoid aggressive washing or repeated handling that can break pearls. Once separated and cleaned, proceed promptly to an appropriate curing method.
