Red Caviar Production: What Responsible Sourcing Really Means

Red caviar—salmon roe or ikura—comes from several salmon species, each with different egg size, texture, flavor, origin, and processing characteristics. Environmental performance also varies by fishery, stock, producer, region, and production method, so sustainability should be evaluated at the specific supply-chain level rather than through broad claims about all wild or all farmed roe.

How Salmon Roe Is Produced

After salmon are harvested, roe must be handled quickly and carefully. The egg skeins are separated, the eggs are released from the membrane, cleaned and sorted, then cured according to the intended product. Temperature control, sanitation, egg maturity, salinity, processing technique, and freezing history can all affect the finished caviar.

Wild Salmon Roe and Sustainability

Wild salmon roe is part of a broader salmon fishery. Its sustainability depends on factors such as stock condition, harvest management, habitat, enforcement, fishing method, and the specific fishery. It is therefore inaccurate to say that demand for roe by itself necessarily causes overfishing, or that every wild salmon roe product has the same environmental profile.

Likewise, certification should be verified for the specific product or supply chain. Do not assume that every salmon product from a region carries the same certification.

Farmed Salmon and Trout Roe

Aquaculture can produce salmon or trout roe under controlled conditions, but environmental performance varies among farms. Feed sourcing, stocking density, disease management, escapes, waste management, water use, location, and regulatory controls can all matter. Some systems use recirculating technology, while others do not.

For that reason, “farmed” should not automatically be treated as either more sustainable or less sustainable than “wild.” Compare the actual producer and production system.

Choosing Red Caviar Responsibly

  • Identify the species. Chum, King, Coho, Pink, Sockeye, Atlantic salmon, and trout roe are different products.
  • Check the stated origin. Use the current product page and package rather than assuming origin from the product category.

  • Consider processing and handling. Good temperature control and careful processing are central to quality and food safety.
