  4. Run the knife along the top shell: Keeping the knife flat against the inside of the top shell, slide it forward to sever the adductor muscle where it attaches to the top shell. Remove the top shell.
  5. Free the oyster from the bottom shell: Slide the knife under the oyster to sever the adductor muscle from the bottom shell. Keep the shell level throughout to preserve the liquor.
  6. Check for shell fragments: Inspect the oyster and liquor for any shell fragments. Remove with the knife tip. Do not rinse -- rinsing washes away the liquor and flavor.
  7. Place on ice immediately: Set the shucked oyster cup-side down on crushed ice. Keep the oysters properly chilled and serve them promptly.
